Peppers Stuffed with Chicken
4 peppers
Cold cooked chicken
Soft bread crumbs
Stewed tomatoes
Onion Juice
Salt and pepper
Chicken gravy
Cut a slice from the stem end
of peppers, remove seeds and
parboil three minutes in boil
ing water. Chop chicken fine
and mix with an equal amount
of soft bread crumbs, moistened
with stewed tomatoes and sea
soned with onion juice and
pepper and salt. Stuff peppers
with chicken mixture. Place in
muffin tins and sprinkle with
buttered crumbs. Bake at 400"
ten minutes. Serve v?ry hot with
chicken gravy poured over.

Baked Hominy with Cheese
1 cup boiling water
1 teaspoon salt
a cup fine hominy
1 cup n.ilk
U cup butter or margarine
1 tablespoon auear
t esc, silently beaten
1 cup mi;k
Grated cheese
Mix in top of double boiler,
boiling water, salt, Add gradual
ly the hominy, stirring constant
ly. Bring to boiling point and
boil two minutes. Cook over hot
water until water is absorbed
Add one cup milk, stirring thor
oughly and cook one hour. Re
move from heat and add butter
or margarine, sugar and egg
mixed with one cup of milk.
Turn into buttered baking dish,
sprinkle with grated cheese and
bake one hour at 350

3 persimmons
3 tablespoons sugar
3 tablespoons lemon
cup cream, beaten stiff
Sponge cake
Remove skin, stem and seeds
from persimmons. Reserve one
tablespoon of pulp. To remaind
er add sugar and lemon juice
and fold in cream. Split sponge
cake and spread between. To

2 tablespoons butter
cup hot milk
3 cups hot mashed potatoes
' cup minced onion
2 teaspoons salt
' teaspoon pepper

Melt butter, combine with milk, mash

egg yolks and add to potato mixture,
