Greens. Aids Menus "
In spring, when the green returns to Its own in nature, salads par
ticularly green salads occupy an increasingly Important place In our
diets,' The salad bowl is. not a modern addition to the menu. It was cus
tomary to serve Dowls of salad greens In early Koman times. Ana m
the. 17th Century England, salad making must nave oeen someming
of an .art, for Jehn Evelyn, described
a good salad to ' these words: "In
the---composure -of a ; salad, every
plant should bear its part like notes
of. Tragic." , ' ; . . , L , :
;It '.Is not quite clear : Just when
salad dressings came into use, but
today they are an lndispenstble part
of trie salad. ,;The use of ' wine in
salad dressings Is a culinary prac
tice :Vapproved by generations of
gourmets: Salad dressings' made
with white-wine nccentthe distinc
tive flavor -of each salad ingredient
to make It "bear its part" In the
spring-salad symphony.
A succulent green salad tossed
lightly with ft dressing made from
white wine, salad- oil' and .spices is
most appropriate for . the spring
dinner, -f A -variety of: spring greens
including. -endiye,.. watercress, ..fresh
spinach, leaf lettuce and green pep
per with a few slivers of carrot and
some sliced radishes for color makes
a good salad combination.
The wine dresses uses a fine Cali
fornia white wine, such as Hock,
Sauterne or Riesling, a dash of
lemon Juice, salt, paprika; white
pepper aiid'rsugait--wittr a whlf of
garlic, '(or one sliced onion) and
a salad oil. This wine dressing may
be used to .dramatize any vegetable
salad.
Nor Is It a, culinary extravagance.
For our . fine native-grown wines
are available everywhere at modest
prices and the bottles of wine on
the pantry ehelf will often be used
by the enterprising cook to trans
form budget dishes Into company
entrees.'- .
