A receipt from Edward N. Cooke. Oregon's Id'at republican state treasurer, to J. D. Boon, who pre ceded him. the document was found by Mrs, Hal Pat ton. Salem, whose late husband was a grandson 01 Cooke. The paper Is dated September S. 1862. In long-hand la written "Re ceived from J. D. Boon, the former state treasurer of the state of Ore gon, the following stale moneys and other property as follows: In cash and gold coin this sum . . . $35,914.43. In notes and mortgages of the nmmnn school and universltv funds f this sum . . . S17.90S.35. 'Five new state books. "Two old state books. "One common school book, old. "One writing desk. "One safe. "Cash for our safe Forty Dollars (MO sold by J. D. Boon to Luther CI kins. And a large bundle of old cancelled state warrants." "Edwin N. Cooke, state treasurer." Maatfta mnn Rules For Jelly Making If you want your Jelly to be firm and beautiful In color, yet not too hard and rubbery, you must follow certain important rules. The amount of sugar needed for jelly will vary with the fruit used. In a general way to 1 cup of supar per cup of extracted fruit Juice la a safe Jambalaya Is Just the Thing One cup rice, 1 tablespoon butter, 1 tablespoon flour, l'-i cups diced tomatoes. 1 onion, thyme, parsley, 1 green pepper. 2 teaspoons salt, ' teaspoon pepper, I bud garlic (op tional!, few drops tabasco sauce, 1 teaspoon Worcestershire sauce, 1 slice ham. 1 cup cleaned shrimps. 4 cups water. Melt butter and stir in flour and cook and stir until boobly. Add ham which has been finely chopped, shrimp and tomatoes. Cook a few minutes and add onion, herbs. shredded green peper salt and other seasonings, and water. Cook slowly for 15 minutes and arid rice. Cover and boil until rice is tender. It will take about half an hour. Or when the rice is added the heat can be re duced and the mixt'ire cooked for an hour over very low heat. rule to follow. Such fruits as black berry, apple, black raspberry, cran berry, quinces and red raspberries require of a cup of sugar to each cup of Juice. Crabapplea. currants, gooseberries and wild grapes re quire 1 cup of sugar to each cup of Juice. Fruit that la Just a bit under-ripe is best for jelly mak ing. If it is possible to obtain under-ripe fruit. 1 tablespoon of strained lemon juice added to each cup of fruit Juice will produce almost the same result. The lemon Juice should be added when combining the sugar and fruit juice to be boiled together. It la unimportant whether cane or beet sugar la used but in either case remember that too much sugar makes syrupy jelly while too little will prevent your juicea from Jelling at all. It Is best to use a large flat bot tomed kettle in making jelly so that rapid evaporation can take place. Stir until the sugar is dissolved, then cook only long enough to ob tain the jelling test. For this dip a large spoon into the boiling syrup and lift the spoon so the juice runs off at the side. When the Juice "sheets." turn off the heat.
