Suggestions For
Housewives Who Fail
To UtilizeSour Cream
A good tip for the housewives this week, we believe,
would be some suggestions for utilizing sour cream in the
preparation of food and "dainties." Most of you would not
believe the facts of tne case u you
knew the amount of sour cream
and milk that Is thrown away each
day as simply useless and not worth
bothering with I You know, our
grandmothers used to say that they
could make the best of their fam
ous recipes with sour cream so
why not depart from the modern
idea that It can not be utilized and
try some of these delicious rules.

good cook desires!
. SOUll CREAM SALAD DRESSING .
1 tcaspoonful . auBar .

1 cup of sour creaoi '
1 tableapoonful vinegar' ' '
Put the dry ingredients into a
bowl and add the sour cream and
vinegar. Mix thoroughly. Either
dry or prepared mustard may be

MUSHROOM SAUCE
3 tablespoons butter
, 4 tablespoons flour
H cup chicken stock
1-3 cup cream
114 cups milk
. teaspoon bb),

Vt cup mushrooms
Melt butter and add flour. When
blended add stock, cream and milk
' nd cook until creamy sauce forms
8tlr constantly. Add rest of Ingre
dients and pour around croquettes.
If fresh mushrooma are used,
they should be peeled and cut Into
Inch dice and browned for 5
minutes In 3 tablespoons of butter.
CHICKEN CROQUETTES
4 tablespoons butter or chicken fat
8 tablespoons flour
3-3 cup chicken stock
Hi cups milk
1 tablespoon chopped pi mien to
1 tablespoon finely chopped ircen
pepper
Melt butter and add flour. Blend
well and add stock and milk. Cook
Slowly and stir constantly until
thick, creamy sauce forms. Add rest
Of ingredients. Cook 2 minutes,
stirring constantly. Cool. Take
tablcspoonsful of mixture, dip into
crumbs, then into egg mixture and
again into crumbs. Snap into c :s
2 inches high and VA inches wide
at the bottom. Pry In deep hot fat
until well browned. Serve hot and
garnish with parsley.
CRUItm AND EGO MIXTURE
2 cans or 4 yolks
a tablespoons milk
,i teaspoon salt
' 2 cups rolled bread or cracker crumbs
Place the crumbs on shallow pan
or paper and mix eggs, milk and
suit In a small shallow dish. Dip
croquettes.
CELERY SOUP
1 CUP diced celery
) tablespoon chopped onion
' 3 cups water
1 Vi teaspoon salt
'A teaspoon paprika
9 tnhlespoons butter
3 tablespoons flour
- 3 cups milk
1 teaspoon chopped parsley
Mix celery, onion, water and salt.
Cover and cook slowly 20 minutes.
Press through strainer. Melt butter
and add flour, when blended add
milk and cook until creamy sauce
forms. Add seasonings and strained
celery mixture, cook 3 minutes
' APPLE CAKE

B tablespoons lard
, 3-3 cup milk
- Mix flour, baking powder and
salt. Cut lard into dough. Mixing
with knlft, add milk. When soft
dough forms, pat out until It la H

used. If celery is used in the salad,
the celery seed may be omitted in
the dressing. This is excellent with
vegetable salads. Seasonings, of
course may be varied to suit in
dividual tastes.
SOUR CREAM PIE
1 cup susar
1 cup sour cream
1 cup raisins
1 teaspoon each of cinnamon, nutmeg
1 teaspoon vanilla (
1 tablespoon vinegar "
4 teaspoon salt
1 egg
Mix sugar, sour cream, spices
thoroughly. Add raisins, vinegar,
and beaten egg last. Bake between
crusts in oven set at 475 degrees for
15 minutes then at 350 until done.
Serve with whipped cream.
SOUR CREAM BISCUITS
3 cups sifted flour
1 teaspoonfuJ salt ( V
1 tablespoon sugar
scant teaspoon soda
3 level teaspoons baking powder
1 cup sour cream
Mix dry ingredients, add cream
and beat well. If there is not
enough moisture to roll, add a lit
tle water. Toss on a floured board
and pat or roll lightly to inch
thickness. Cut with biscuit cutter,
place in pan, brush over top with
either melted shortening or but
ter. Bake in hot oven 12 to 15 min
utes (450 degrees).
SOUR CREAM CAKE
114 cups sugar
1 large cup sour cream
3 eggs, beaten
1 scant teaspoon soda
3 level teaspoons baking powder
Mi teaspoon salt
1 teaspoon vanilla
3 cups sifted flour (3 times)
Mix sugar and yolks of eggs to
gether; add a few drops of sour
cream alternately with sugar. ift
flour, soda and baking powder and
add to first mixture with rest of
sour cream. Beat hard and then
fold In the whites of the eggs
(beaten lightly). Bake in loaf or
layers in oven set at 350 degrees
about 15 minutes. Cover with any
frosting desired.
SOUK CREAM COOKIES
3 cups sugar
Ik cup shortening
3 eggs
1 cup sour cream
6 cups flour
14 teaspoon salt
1 teaspoon soda
14 teaspoon nutmeg
1 teaspoon lemon or vanilla flavoring
Mix in order given, beating whole
eggs with juice of lemon or vanilla.
Sift flour, salt, soda and nutmeg
together. Drop on greased baking
sheets with teaspoon and bake In
moderately hot oven, about 400 de
grees, for 12 to 15 minutes.
CHEESE CAKE
(Serve Cold)
1 unbaked pie shell
3 cups cottage cheese
1 cup sugar
a tablespoons flour
M teaspoon salt
3 tablespoons butter, melted
3 tnhlespoons lemon Juice
1 tablespoon grated lemon rind
3 eggs, beaten
Mix cheese, sugar, flour, salt and
butter. Add juice, rind and eggs and
beat 2 minutes. Pour into pie shell
and bake 10 minutes in moderate
oven. Lower fire and bake 30 min
utes in slow oven. Cool and serve.
Whipped cream can be spread on
the pie when served.
SARDINE RELISH FILLING
(For 13 Sandwiches)
',4 CUP sardines
4 awcet pickles, chopped
4 tablespoons salad dressing
1 teaspoon lemon juice
3 tablespoons chopped celery
Mix ingredients with fork, Spread
on buttered slices of bread. Add bits
of shredded lettuce and cover with
other bread slices.
KIT-HUN LtAUOK-SAVERS
To clean baking dishes and pans,
soak them in hot water to which
washing soda has been added. Use
one tablespoon of soda for each
quart of water required to fill the

power to place the entire Wholesale
industry under a permit system.

114 cups light brown sugar
X tablespoons cream
1 teaspoon vanilla -3
eggs
14 teaspoon cinnamon
14 teaspoon salt '"' - " -
3-3. cup broken roasted peanut
914 cups flour
1 teaspoon baking powder
Cream fat and sugar, and rest of
ingredients. Drop portions of soft
dough from tip of spoon onto
greased baking sheets. Bake 12
minutes in moderate oven.
Always hang up brooms by the
handles. If allowed to stand on the
bristles, they will soon lose their
stiffness.

All Meal Planning
"A Quart of milk a day for every
child and a pint for every adult" is
an all-time rule in meal planning,
but how often is the housewife con
fronted with the fact that her fam
ily does not like milk and "wouldn't
drink a glassful for a farm" to quote
Johnny.
The average woman with a fam
ily to feed knows the Importance of
the fact that milk is the most near
ly perfect food that it contains va
luable vitamins and minerals which
are necessary tor the health of her
family so she does not give up In
despair, but turns her thoughts to
schemes for getting the members of
her family to eat milk In spite or
themselves. , .
First of all for breakfast; cereals
and milk go hand in hand, . and
strangely enough the family does
not object to milk when poured over
crisp corn flakes with sometimes a
sliced banana over the top. The wise
housewife plans for a variety of

(335 degrees) 45 minutes or until
