Clean and truss the fowl, rub

Pre-heat electric oven, both
heating units on "high" to 500
degrees. Set heat control for 400
degrees. Turn upper unit to

letting the tnrkey pan rest on the
second slide from the floor ot the
oven, and use the pan uncovered
and without water. If turkey la
not fat, about 2 strips of salt pork
can be used, placing upon the tur
key. Continue this heat about 1
hour, then reduce heat control to
300 degrcos for possibly 3 hours
longer, making a time ot 4 hours
for a turkey weighing 18 to 20
pounds. If turkey is largo you
will not bo able to have anything
else In the oven. Do not open the
oven unnecessarily, and no bast
ing will be necessary as the elec
tric -oven has no circulation of
air.

Plum Pudding
One-half pound ot beet suet, 1
pound seeded raisins, Vi pound
citron, 3 tablespoons brown sugar
cups flour, grated nututog
1, teaspoon mace, l teaspoon cin
namon, 2 tablespoons cream, 3
egge, & cap orange Juice. Chop
suet fine, also citron, fruit and
Bplce; add flour and tou togeth
er; beat egg yolks and add cream
beat and add orange juice and last
tha egg whites, , beaten stiff. Put
In oiled pudding form. Add one
pint ot water to cooker pat and
bring to boiling point on ' high'
Place pudding In cooker pet. con
tinue 11 minutes on "high" and
reduce to medium for 2 hourgt

One-halt teaspoon salt, fA tea
spoon baking powder, 24 cups
lour, cup fat, cold water, and
1 teaspoon lemon luice. Sltt and
mix together tlour, salt and bak
ing powder. Cut In fat with two
knives. Chill two hours. Then
take out cup and to remainder
add lemon juice and cold water
gradually to make stiff paste.
Knead lightly and roll Into long
narrow strips. Sprinkle dough
with halt ot reserved mixture and
fold so as to make three layers.
Roll and repeat process, fold, etc.
This dough is ready for cakes,
puddings, or sufficient tor two
Dies. To bake a pie shell, preheat
Hotpoint Electric Oven to 490 de
grees. Set heat control for 460

Pumpkin Pie
Beat 3 eggs lightly, add VL tea
spoon salt, 2-3 cup sugar and beat
again. Then gradually add 2
cups milk, cap cooked punrp-

filling to crust.
Preheat electric Oven to 460
