Fnttli Vegetable and Beef Loaf (Yield: Ten 'rlnch si J re) Two pounds ground chuck, 1 cup fine dry bread crumbs, 2 eggs beaten; teaspoons salt, H tea spoon ground black pepper, cup chopped fresh parsley. 2-3 cup fine ly chopped green pepper, 1 1-3 i cups finely chopped onion, cup: $ finely diced fresh tomatoes, 2 med 7-ium fresh mushrooms,, sliced (op Jtional), 2 teaspoons butter ormar garine (optional). Thoroughly mix all ingredients ; except mushrooms and butter or or margarine. Pack firmly into a paper-lined, greased 9 x 5 x 3-inch loaf pan. Bake 75 minutes in a preheated moderate oven (350 de grers F.t. Turn out onto a serving platter. If -desired saute mush rooms in butter or margarine and place over top. Serve with but tered parsley, fresh carrots. Grilled Scallloiui on Toast or Waffles (Yield: 6 servings) Five to 6 bunches scallions, M inch boiling water in pan, ' tea spoon salt, 3 tablespoons butter or j margarine, 3 tablespoons flour, 1-1 i cups milk, teaspoon salt, teaspoon grould black pepper. 6, waffles or 6 slices toast, 2 fresh medium tomatoes, cup grated sharp Cheddar cheese. Peel scallions leaving on 2 inches of the green tops. Place, whole, in saucepan. Add boiling water and salt. Cover.
