Dried beans, peas and lentils need to be soaked before cooking, the two former for twelve hours, lentils for one to three hours. This is to make them swell. These vegetables can be boiled, not simmered. Tough or old ryots and stems should be grated before using for thick soups. This makes them puss n.ore easily through the sieve ant) does not wear out the wires. All thick soups should be rubbed through a sieve with a spoon. Falling this, use a potato masher or a col ander, or mash the pulp smooth witli fork and spoon. Thick soups require to be bound to make them smooth and pleasant to eat.
