Relish, Peanut Butter
Make Tasty Sandwich
"Wonderful" Is the best word
to describe the flavor of a whole
wheat bread sandwich with a
raisin relish filling. Make the
relish by combining a pound can
of jellied cranberry sauce with
cup raisins, 'i teaspoon cinna
mon and 2 tablespoons lemon
juice. ChilH several hours.
Fish Gumbo
1 pound frozen fish fillets (cod
haddock or ocean perch)
cup butter or margarine
2 large onions, chopped
2 green peppers, chopped
2 No. 2 cans tomatoes and okra
2 teaspoons salt
'A teaspoon pepper
1 bay leaf
1 cup cooked rice
Let fillets thaw on the bottom
shelf of the refrigerator or at
room temperature. Meanwhile
melt butter in a saucepan. Add
onions and peppers and cook un
til tender. Stir in canned toma
toes and okra and seasonings.
Cook over low heat at least IS
minutes (overcooking doesn't
hurt gumbo so long as the fish
hasn't been added). Cut thawed
fillets into cubes. About 10 min
utes before serving lime, add fish
and rice to gumbo. Cook about
8 Minutes or until fish flakes
easily when tested with a fork.
Makes 4 servings.
