Serve Lemon Sauce
On Warm Desserts
A lemon dessert sauce is
quickly made to serve hot on
cottage pudding, steamed pud
ding and other other desserts that
are served warm. It is good on
chilled desserts, too! To make
lemon dessert sauce just melt
1 tablespoon butter in top of
double boiler, add beaten egg.
Stir in H cup honey, 3 table
spoons lemon juice, 1 tablespoon
grated lemon peel and V tea
spoon salt. Cook over boiling wa
ter until thickened, stirring frequently.

Show Off Peaches In Laltice-Top Pie
Peaches look so pretty in a pic
that it seems a shame to cover
them up entirely so weave a
latticed pastry top. Roll out pas
try and cut into lb-inch strips,
using a sharp knile or pastry
wheel; weave lattice on waxed
paper, spread over a baking
sheet. Chill while completing pie,
then flip lattice over filling and
seal around edge. Brush with
milk and sprinkle generously with
beet or cane sugar before baking
makes it sparkle.
Criss-Cross Peach Tie
Pastry for 2-crust pie
l'i cups beet or cane sugar
V.i cup sifted all-purpose lfour
lb teaspoon cinnamon
14 teaspoon each nutmeg and
salt
4 cups sliced freestone peaches
(takes about 2 pounds)
1 tablespoon lemon juice
1 tablespoon butter or margar
ine,' melted
1 egg yolk
2 tablespoons cream.
Make latticed lop of half of
pastry; line 9-inch pie pan with
remainder.
Combine sugar with flour, spic
es and salt; mix lightly with
sliced peaches before arranging
in pastry-lmca pan; sprinKie whh
lemon juice.
Combine butter or margarine,
egg yolk and cream, drizzle over
peach slices. Adjust latticed top
over filling; seal well. Brush with
milk and sprinkle with sugar.
Bake in a very hot over (450
deg. F.) for 10 minutes; reduce
heat to moderate oven (350 deg.)
and bake 30 minutes longer. Ke
move from oven; cool on rack.
Servo while still warm.

LIME PARTY LOAF is a festive and delicious dessert made with white rice, lime flavored gelatin
and whipped cream. It's easy to make, too, for there is little measuring, few ingredients, no peel
ing or chopping, and only a bit of stirring. Wonderful flavor and simple garnishes make this an
outstanding dessert.
Vary Sandwiches
With Different
Kinds of Bread
Surprise and please the family
with a variety o sandwiches this
month. There are many suggested
fillings that add "spice" to the
"meat" of the sandwich but they
may be varied in other ways too.
Experiment with the carrier of
the fillings the bread.
There are always the favorites
round hamburger rolls and long
frankfurter buns. Although they
are ideal for what their names
imply, they may also harbor other
glamorous fillings. Try a tuna
salad filling on toasted frankfur
ter buns, and this will be the be
ginning of dozens of delicious pos
sibilities. A peanut butter, orange and
coconut filling on buttered raisin
bread may provide a new after
school snack. Or, broil tomato
and cheese slices on an English
muffin for a different combina
tion. Old-timers might like a corned
beef on pumpernickel sandwich.
It satisfies happy memories as
well as appetites. Or, try Boston
brown bread for a baked bean and
diced frankfurter sandwich.
On the lighter side, date nut
bread with a creamed cheese,
bacon and olive filling makes
almost a party food of an after
noon snack. Tall glasses of minted
iced tea or coffee round out the
menu.
Another new adventure in taste
is found by using hard rolls for
ham and cheese sandwiches or
juicy fillings. Rolls make a nice
package for many delicious foods.
Of course, the most popular
sandwich bread is enriched white.
It lets the full flavor of the filling
come through.
Whole wheat bread is another
favorite, while rye bread has sev
eral variations in its own clan
such as Swedish rye and caraway
rye bread. Top slices of rye bread
with sardines, sherd onion and
tomato for. a 'super" sandwich
treat.

Lime Party Loaf Makes
Refreshing, Pretty Dessert
Fancy enough for a party, but
at a "budget-happy" cost, is this
Lime Party Loaf. It's called Par
ty Loaf because it is so pretty,
so festive, and so delicious. Yet it
takes little time to fix.
There is very Ijttle measuring,
only a few low cost ingredients,
no peeling or chopping, and only
a tiny bit of stirring. The refrig
erator docs most (If the work.
Wonderful flavor and simple gar
nishes make this dessert outstanding.
Lime Party Loaf
1 cup uncooked white rice
2 cups water
1 teaspoon salt
2 cups milk
3 packages lime flavored
gelatin
1 cup hot water
2 cups cold water
1 cup whipping cream, chilled

Will Be a Hit
Have the gang over for a real
"Dutch Lunch" served gaily in
the yard. Along with the big sour
pickles, Gouda cheese and rye
crackers serve plenty of "Dutch
Treat Sandwiches." Simply mix
liver sausage softened with may
onnaise and topped with this!

Dutch Treat Sandwiches
1 medium-sized Caiavo
Salt
1 cup liver sausage
Vi cup mayonnaise
Butter or margarine
12 slices .bread.
To prepare Caiavo, cut Into
halves lengthwise and remove
seed and skin. Cut fruit into thin
lengthwise slices and sprinkle
with salt. Blend together liver
sausage and mayonnaise, and
spread on slices of buttered
bread. Place Caiavo slives over
sausage mixture, and top with
Put rice, water and salt into a
2-quart, or larger, saucepan. Bring
to a vigorous boil. Turn the heat
as low as possible. Cover and cook
over the low heat 14 minutes. Re
move the lid and vigorously stir
in the milk. Cover and cook slow
ly 15 minutes, stirring several
times. The mixture should be
very creamy and all the milk
should not be obsorbed.
While the rice is cooking, add
the gelatin to the hot water. Stir
over a low heat until dissolved.
Mix the hot rice and hot gelatin.
Add the cold water. Cool and chill
until the mixture begins to thick
en. Beat vigorously with an egg
beater until creamy. Even if the
mixture becomes solid, allow it
to soften and beat vigorously.
Pour into a greased loaf pan
(9'A" x 5'i" x 214") or into a
ring mold, or spoon into dessert
dishes or sherbet glasses. Chill
until firm. If molded, unmold by
running a knife around the edges,
then dipping the mold into hot
water, placing a plate over mold
and inverting plate and mold to
gether. To serve, garnish with the
cream which has been whipped
until stiff and with slices of lime
topped with cherries or with
strawberries, raspberries or some
other fruit.
This recipe makes ten servings.
