If you're lucky enough to have
one, roast tne meat mixture in a
large heart mold, or use the
smaller individual heart molds.
Either way, outline the heart with
mashed potatoes.
Remember that a meat loaf
should be cooked slowly the same
as any other roast. Slow roasting
assures you of a finer loaf to
serve. The recommended oven
temperature for beef, veal, lamb
or smoked pork loaves is 300 deg.
F.; for fresh pork loaves and all
mixtures containing fresh pork,
350 deg. F.
Valentine Meat Loaf
1 pound ground beef
1 pound ground pork
2 cups soft bread crumbs
2 tablespoons grated onion
3 teaspoons salt
Vi teaspoon pepper
1 teapsoon sage
2 eggs
1 cup milk
1 tablespoon Worcestershire.

2 cups season mashed potatoes
Combine all Ingredients except
mashed potatoes and mix thor
oughly. Pat into a rectangular
shaped loaf in an open roasting
pan. Bake in a moderate oven
(350 deg. F.) for IVi to 1 hours.
With pastry tube or spoon make a
border of mashed potatoes around
loaf and shape a heart on top of
loaf. Return to oven until potatoes
are lightly browned. Serves 6 to

Onion Snack Bread
Besides 6 to 7 cups flour youll
need:
1 cake compressed, or 1
envelope dry, yeast
'V cup lukewarm water
2 cups boiling water
24 tbs. shortening
2 tbs. sugar
3Vi tsp. salt
1 cups sliced onion '
1 tbs. butter
1 tsp. onion salt
Soften yeast in lukewarm water.
Pour boiling water over shorten
ing, sugar and salt. When cooled
to lukewarm add yeast mixture.
Sift and measure flour. Add 2
cups flour to liquid mixture. Beat
till smooth. Add enough more
flour to make stiff dough, Turn
out on lightly-floured board.
Knead till smooth and satiny,
Place in greased bowl. Grease top
lightly. Cover. Let rise in warm
place (80-85') till double in bulk.
Punch down. Divide dough in
half. Pinch off into balls and
place on baking sheet. Press cen
ter down with fingers to make
cavity for onion filling. Let rise
till double in bulk. Press cavity
again and fill with onion filling.
Bake at 400" 20 mins.
Form remaining dough into
French loaf. Let rise till double
in bulk. Split top of loaf; fill with
onion mixture. Bake at 400 40
45 mins. (Put pan of hot water in
lower part of oven for crisp
crust)
Onion Filling;
Cook onions in butter till ten
der and clear in covered pan, stir
ring frequently. Filling should be
cold before putting into dough.

Win at Card Party
BELLFOUNTAIN Mr. and
Mrs. Clifford Larkin entertained
the Fortnightly 500 Club recently
at their home in Bellfountain. A
potluck dinner preceded an eve
ning of cards. High score and high
punch went to Mr. and Mrs. J. A.
Hensyel and Clifford Larkin. The
next meeting of the club will be
Saturday, Feb. 8 at the George R.
Buckingham home.

Chinese Sweet-Sour
Spareribs Are Tasty
The philosopher who first said
something about "the closer the
bone, the sweeter the meat" might
'lave been thinking of spare ribs,
rarticulnrly in the Chinese sweet
our style. It is an epicurean de
light, easily nnd quickly prepared
;n a pressure cooker, and easy on
the budget.
Chinese Sweet Sour Spare Ribs
3 lbs. pork ribs in serving
pieces
1 tablespoon shortening
1 clove garlic, finely chopped
Vi teaspoon ginger
1 teaspoon salt
Vi teaspoon pepper
lfe tablespoons sugar
a4 cup vinegar (white)
2 tablespoons soy sauce
Method: Heat pressure cooker,
add fat. Sear ribs until golden
brown. Combine all remaining in
gredients and pour over ribs.
Place cover on cooker. Allow
steam to flow from vent pipe to
release all air from cooker. Place
indicator weight on vent pipe and
cook 15 minutes with steam at
cook position. Cool cooker at
once. Simmer ribs in uncovered
cooker for several minutes or un
til well coated with sauce. Serves
four to six.
Ham Hock Dinner
2 pounds smoked ham hocks
Water to cover
4 medium carrots
4 medium onions
4 medium potatoes, unpecled
1 small head green cabbage,
quartered
Cover ham hock with water.
Cover and simmer about 2 hours.
When meat has cooked 1 hours,
remove skins from hocks. Return
hocks to cooking liquid and add
carrots, onions and potatoes. Cook
20 minutes and add cabbage. Cook
15 minutes longer or until meat
and vegetables are done. Arrange
ham hocks and vegetables on
platter. 4 servings.

(bran flakes)
For a teen-age party serve
burgers on buns and cole slaw;
add salted peanuts to the slaw.
Blend shortening and sugar; add eggs, milk and raisins. Beat well. Sift flour with baking powder,
salt and spices. Add to shortening mixture with brand flakes; mix well. Drop by spoonfuls onto
greased baking sheet. Bake in moderate oven (375 deg. F.) about 15 minutes.
Yield: 5' dozen cookies, 2-inches in diameter. "
