Angel Cooperative cream ery is still on the job,; fulfilling the primary function of a cream ery the manufacture of butter. The annual meeting will be held here Monday, January 28. j In these days when the diver sion of cream and milk into other uses -whipping cream, ice cream, bakery products, etc. can net a creamery from 30 to 60 cents more for each pound of butterfat than can be realized by converting! it into butter, it takes real stamina to hold to the less remunerative process. ; j During the war, the limitations on distribution and use of food provided a more balanced market. At the close of the war, the lifting of these restrictions on all other dairy products caused a greater demand for butterfat for use in ice cream, table cream, etc., be cause the . ceiling price remained on butter. Thus the return 'on butterfat in butter was out I of line with that used for other pur poses. 1 The price of from 85 cents to$l per pound for cream that flows! to other uses agairwt 56 cents for butter has led some creameries to discontinue the manufacture; of butter. I Farmers too are running after the gleaming dollar by turning from dairy products to crops that bring a higher market price. The entire situation dims the outlook for cre-yneries. i Yet the Mt. For years it was the opinion of dairy experts that high quality cheese could not be' made in the Willamette valley due to extreme changes of feed, green grass in the spring and dry barn feeding in the winter and to the extreme changes of ; weather. These opinions kept the Mt. Angel creamery from go ing into the cheese manufacturing earlier. But when the demand came for lend-lease and other governmental purposes became as great as it did, the creamry ventured into the new undertaking. Using the latest and most modern method of manu facture such as standardizing, pas teurizing and control of tempera ture for curing and ageing, the creamery discovered it could make as good a cheese as produced any where in the west, not even ex celled by Wisconsin. This has been proven by the many quality awards received in the short time the creamery has been making cheese, the American cheddar.
