The fluffy wheat dumplings take a sauce of colorful cherries and cinnamon candies, which is glazed for looks. Wheat Gives Nice Flavor Cherry Flips, apicy hot cherry dumplings, are nutritious, made with instant whole wheat cereal the kind with extra wheat germ added, economical, and can be cooked in just 15 minutes. How ever, so far as your family is concerned, Cherry Flips are pretty and taste even better than they 100K. Just before serving, the little dumplings are flipped over and served glased with shiny red cher 17 sauce. Prepare the sauce and add the dumplings Just before you it down to eat. CHERRY FLIPS cup sugar 1 tablespoon cornstarch ' 1 tablespoon cinnamon candies I (red hots) 1 1 can (1 lb.) tart red cherries S tablespoons butter or margarine Combine sugar and cornstarch In a skillet. Stir until dissolved. Add cherries and butter.. . Heat to Boiling. , , DUMPLINGS cup sifted all-purpose flour 1 tablespoon sugar 1H teaspoons baking powder teaspoon salt Vt teaspoon cinnamon V teaspoon nutmeg t H teaspoon all-splce Dash cloves teaspoon grated lemon rind Vi cup Instant whole wheat cer eal Combine lifted dry Ingredients, lemon rind, and instant whole wheat cereal. Add milk. Stir just until flour is moistened. Drop by heaping teaspoonfuls into boiling sauce. Cover. Cook over moder ate heat IS minutes or until dump ling! are light and dry. To serve, spoon sauce over flipped dump lings. Yields t 2-inch dumplings. Injun Joe Pudding is another adaptation of that favorite dessert of New England, Indian Pudding. Years ago thrifty Yankee home makers served this spicy and nu tritious dessert to the family on wash day because It cooked slowly for many hours and didn't require watching. 1 Traditionally, Indian Pudding is made with corn meal but Injun Joe, for the nutrition-minded, is made with instant whole wheat cereal. . Notice that after the milk, cere al, sugar and spices have been cooked, it's time to add the egg. Instead of adding the egg to the mixture and thereby inviting cer tain curdling, beat a little of the Luncheon Salad Features Tuna Tuna salad becomes company fare when you serve it on rings of flavorful avocado. You'll -want to serve Lisa's Luncheon Salad often now while fine-quality avo cados are plentiful and inexpensive. LISA'S LUNCHEON SALAD 1 large avocado Fresh lime or lemon Juice Salt 1 green pepper Lettuce 2 cups thinly sliced celery 1 cup flaked tuna Vt cup mayonnaise V teaspoon salt Dash Tabasco sauce Paprika Cut avocado Into halves cross wise. Twist slightly to loosen frem seed. Cut each half Into S rings. Remove akin and sprinkle fruit with lime Juice and salt. Cut pep per into 6 rings; remove seeds. Arrange avocado and pepper rings on lettuce. Combine celery, fish, mayonnaise, salt, 1 teaspoon lime juice and Tabasco sauce and blend well. Heap onto pepper and avo cado rings. Sprinkle with paprika. Makes 6 servings. hot cereal mixture into the egg. As soon as you've added enough to heat the egg, reverse the pro cedure and pour it back into tne saucepan. If you continue to cook this for about S minutes, the egg will thicken the milk still more so that when you stir in the molasses, there'll be no chance of curdling. One more note when Injun Joe is ready to serve the family, the milk will have formed a large brdwn bubble on top. Don't worry about it at all your Just being tra ditional. INJUN JOE PUDDING I cups milk Vt cup instant whole wheat cer eal Vt cup sugar V teaspoon salt Vi teaspoon ginger Vt teaspoon cinnamon 1 egg, beaten 1 tablespoon margarine or but ter Vt cup dark molasses 1 cup milk, cold Heat oven to slow (300 degrees). Slowly heat milk to boiling. S'ir cereal in gradually. Boil and stir until thickened, minutes. Add sugar, salt, and spices. Remove from heat. Beat part of hot mix ture into egg. Return to saucepan. Cook and stir S minutes, or until thickened. Add margarine. Mix. Beat in molasses (constant stir ring prevents curdling.) Pour im mediately into greased baking dish. Bake 30 minutes. Add cold milk. Do not stir. Bake 2 hours I longer or until set. Serve with warm cream or ice cream. Yield: 6 servings. With an electric skillet, the Cherry Flips can be cooked right at the table to tempt the whole family into keeping plenty of spece for the delicious dessert. Dates Make New In Cake Ideas pate flavor is a popular one, and especially in cakes and cook ies. Try this'extra good cake using dates as flavor. FROSTY DATE CAKE 2 tablespoons shortening 1 cup Ihopped dates 1 cup boiling water Mi teaspoon salt 1 cup sugar 1 egg, beaten IVt cups sifted all-purpose flour 1 teaspoon soda 1 teaspoon vanilla Vi cup chopped nuts Mix shortening, dates, and boil ing water. Add salt, sugar, and egg. Sift together flour and soda. Add to date mixture. Mix well. Add vanilla and nuts. Pour into 8x8x2-inch loaf pan (bottom rub bed with shortening). Cover batter with topping. Bake in moderate joven (350 degrees) 1 hour. Topping: Blend together 2 table spoons sortening, Vi cup flour, Vt cup sugar, and Vt cup chopped nuts.
