Two Ways
With Rice
And Turkey
Onion and lemon lovers will
rat th top right off this casser-1
ole. Onion and lemon slices are
arranged over the top to nuke ,
an unusual "crust'' made golden
red with paprika. Underneath is
a succulent mature of turkey,
nee and tomato sauce subtly sea
soned with celery seed.
Lemon Turkey Caaternle
ll.a cups water
1' teaspoons salt
cup uncooked while rice
teaspoon black pepper
l teaspoon whole celery seed
2 cups coasely diced cooked
turkey or chicken
1 S-oz. can tomato sauce
1' cupa turkey or chicken brolh
or water
4 lemon slices, halves
About 9 thin onion slice,
2 tablespoons butter or mar

X teaspoon paprika
Put the water, salt and rice In
I 2-quart saucepan. Bring to a
vigorous boil over a high heat.
Torn the heat down low. Cover
with a lid and simmer over this

cooked rice in well ireased li

with the black pepper and celery
seed. Add the turkey, tomato
sauce and 1 cup broth or water.

are tender. Add water If the mix-!

When the onions sre tender,
uncover the baking dish. Pour
the remaining la cup water or
broth over the onion and lemon
! slicea. Cut up the butter or mar
garine over the top. .
Sprinkle with the paprika.
Place under the broiler until the
top begins to brown. Serve Im
mediately. This recipe makes 0
servings.

Rice Stuffing
ih cups uncooked white rice
l's cups water
2 teaspoons salt
2 12-oz. csns whole kernel
golden corn, drained

I tablespoons instant minced
onions
1 teaspoon whole celery seed
1 teaspoon poultry seasoning
teaspoon black pepper
h cup melted butter or mar
garine cup water or broth
Put the rice, S's cups water
and salt in a 2-quart saucepan.
Bring to a vigorous boil over a
high heat. Turn the heat down

Remove the saucepan from the
heat but leave the lid on 10 min
utes. Mix together the corn, minced
onions, celery seed, poultry sea
soning, black pepper, melted but
ter or margarine and the V cup
water or broth. Stir in the rice.
Use Immediately after mixing.
(Dressing has a prominent celerv
seed flavor until baked.) Add
salt and additional pepper and
poultry seasoning to taste.

stuffing, enough for a 10 to 12
pound turkey, ready to cook
weight. If dressing is baked in
a separate dish, add a small
amount of water or broth. Cover
well with a lid or aluminum foil.

Fritters are not a food to be
treated lightly, for there are many
variations, flavors and sbapee te
a fritter, which makes it a handy
you want something different.
Here we offer several kiixu:
CORN FRITTERS
3 eggs, beaten
cup milk
1 tablespoon melted shortening
1 cup sifted all purpose flour
1 teaspoon baking powder
1 teaspoon salt
I cups drained whole kernel

Blend eggs and milk together.
Stir in shortening. Sift dry ingred
ients together and add to egg mix
ture. Fold in corn. Drop by spoon
fuls into fat at 37S degrees. Yield
2 dozen small fritters.
Fruit fritters are used as meat
accompaniments or dessert; Ap
ples are first.
APPLE FRITTERS
t egg beaten
cup milk
1 tablespoon melted shortening
1 tablespoon lemon Juice
1 cup sifted all purpose flour
m teaspoons baking powder
y4 teaspoon salt
2 tablespoons sugar
1 cup sliced apples.
Blend egg and milk together.
Stir in sbortenlnc and lemon juice.
Sift dry ingredients together and
add to egg mixture. Fold iffl ap

BANANA FRITTERS
