Yen For Chocolate Pie Can Be Easily Satisfied The other day, while looking up a recipe for pineapple pie, we Innocently looked in Gourmet Cookbook and of course we were trapped. That cookbook always excites our taste buds and makei us long to be one of those fortunate! who can eat (o their hearts content and not get fat. , But, on second thought, anticipation is more than half the plea sure of eating, and we would far rather be a food enthusiast with an unrequited appetite, than be sylphlike with no Interest in vie uali. Looking for another recipe, we ran acrosi one for Chocolate Fudge pie which immediately attracted our attention, because it sounded rich and chocolaty just what we chocolate-lovers want. CHOCOLATE Fl'DGE PIE h cup butter . 1 squarei unsweetened . 1 cup iui;nr chocolate 1 teaspoon vanilla Mi cup silted flour 2 eggs, separated ! teaspoon salt I'nbaked pie shell Cream butter, gradually add sugar and when light and fluffy, add vanilla and blend well. Add yolks, one at a time, beating well after each addition. Add melted chocolate and flour and mix well. Beat whites with salt until stiff but not dry. Fold into chocolate mixture. Turn into unbaked shell and bake in a moderate oven 350 degrees) for 45 minutes or until pie is puffed on top. Cool, top with whipped cream and sprinkle with chopped nuti. This pudding may be baked in a buttered pie plate not lined with pastry, and served in wedge-shaped piecei ai a pudding. ' Of .course there is chocolate angel pie, a combination of fluffy chocolate in a meringue shell which many tearoom diners find Intriguing. This pie is easy enough to make at home, if you know -the iccret of meringue-making. CHOCOLATE ANGEL PIE S egg whiles 4 ounces iweet chocolate teaspoon cream of tartar 3 teaspoons strong black Pinch salt coffee 4 cup sifted sugar 2 teaspoons vanilla cup chopped nuts 1 cup cream, whipped Beat egg whites with rotary beater until foamy. Add cream of tartar and salt and whip until the whites stand in peaks. Add sugar gradually and beat until meringue is stiff, add half the vanilla. Turn the meringue into a buttered 9-inch pie pan, and make a nest like shell, building up sides of about 4 inch higher than the sides of the pan. Bake in a slow oven 300 degrees) for SO to S3 minutes and cool meringue after removing from pan. hours. Place chocolate and black coffee in a saucepan over a low flame. Stir until chocolate is smooth and melted. Cool and stir in remaining teaspoon vanilla, whip cream and fold in chocolate mixture.
