Features By JODY RICKETTS Statesman Correspondent CORVALLIS Oregon State's delegates to the Model United Na tions are all prepared for this years conference, which is to be held at the San Francisco State College. Oregon State is represent ing the Dominican Republic this year. Each year it is held on different campus. Oregon State will submit an invitation, for host ing the Model United Nations con ferenqe in 1956. Over 100 colleges are represented. , Each year the freshman and sophomore's at OSC have a big picnic where the contests to de termine the "better" class are held. This year Bruce Michels, freshman class president, is work ing with the sophomore class presi dent planning all the activities. Each year the presidents have challenged their classes to win the most points in the different contests. The penalty has not been de cided yet, however. A beauty con test, car parade, burning of the green, canoe tilt, and beard grow ing contest will be among . the events featured. The burning of the green is the activity that especially interests the freshman for they finally get to throw away those green ribbons, and rook lids, which have been identifying them on Wednesday's all year. Each class moves up one class "socially." The date set for this big event is May 7th, Sat urday. Conference is Held Woman's Recreation Association had a conference at the beach last weekend, and some important re visions were made in their laws. Jo Stettler and Eevie Tarem wert co-chairman for the. conference. Primaries . are over at Beaver State, however, the spirit has not lessened and Wednesday is the day scheduled for final elections. Gineer Lively of Salem is com peting for vice-president of the junior class. All plans are completed for Sen ior Weekend, which is scheduled for Friday and Saturday. Many events have been planned for the enjoyment of the high school sen iors attending. The Kappa Delta alumnae will be entertained at the home of Mrs. Leo Johnson, 438 Wayne Drive, tonight at an 8:15 dessert supper. Dennis Clark of the Ore gon Travel Bureau will show a travel film. A Guest Evaluator Salem Toastmistress club met the past week with : Mrs. .Harry Sappenfield, well known local par liamentarian, as a guest to serve as general evaluator for the meeting- . Choral Concert To Be Given Tonight The junior and senior students of Sacred Heart Academy will present a choral concert on Thurs day evening, April 21 at 8:15 p.m. in the auditorium of the Blind School. Interspersed with the .chor al numbers will be voice and pia no solos, by Rosemary Rhoten, Gregory Steiner, James Fliflet, Margaret Huxtable, Charline Tuck er and David Steiner. The inevitable sign is students for saking the weekend mountain trips for the beach. Sorority beach trips took many Lewis and Clark co-eds to the western shores last week end. Delta Phi Gamma held informal initiation complete with festivities at Nelscott. Pledge Sharon Robert son and member Shirley Crothers were among the many Del Phi', joining in the fun. Theta Kappa had a similiar ex cursion at one of the northern beaches., Pledge Rosemary Gilley participated in the initiation, as did Dorna Martin. Quick Whip-Up Upside-Down Cakes Among Many Desserts Made With Package Mix ; By MAXINE BUREN Statesman' Woman's Editor ' One struggle we gave up quickly with little resistance was against packaged cake mixes. Just about two tries and we were completely sold. It may have been because we were never good at making cakes, mainly because we prefer to cook things that do not rquire accurate measuring. In a word, we are a pinch of this and a pinch of that cook,' and have usually preferred to turn our talents to recipes that can be improvised, j Ever since serving some hot gingerbread to a guest whom we consider one of the best known cooks and having her ask for our recipe,, we have been sold on mixes. Take gingerbread then. There's a variety of possibilities for using this one mix. Plain it can be served with any number of - sauces letnon, cherry, grape, orange or custard. , ' s '" OLD PAIR Ginger goes with apples and one of our favorite combina tions is sliced apples and the' mix. Just slice apples thickly into a buttered 8x8 inch pan, sprinkle generously with brown sugar and cover with the gingerbread mix. Bake as usual. The other day we used frozen pie cherries with gingerbread for quick refreshment when company phoned they were on their way out to our place. We brought the contents of a carton of unsweetened pie cherries to a slow boil with about half as much sugar as needed, and lei it boil while combining gingerbread mix and water according to directions. (The cherries would not have had time to thaw and cook sufficiently in the short time it would take for the gingerbread to bake, hence the pre-cooking of the fruit. j Then skimming the cherries out of the liquid, we arranged them on the bottom of the right sized pan in which we melted a generous amount of butter. Sprinkling with the other half of sugar needed for sweetening the cherries and adding only enough of the juice to rqelt the sugar (the less the better) we added the prepared mix and baked it for 45 minutes. In the meantime, we thickened the juice slightly with cornstarch and served it over the gingerbread, which was served cherry-side up. A regular upside down cake with traditional pineapple slices is good when gingerbread is used, too. Make it just like any other recipe. While still in the subject of upside down cakes, , we might suggest using such fruits as mixedcanned mixed cock tail or salad fruits, assorted slightly stewed fruits, frozen rasp . berries, bananas, orange segments or caramelized sugar and pe . cans (the mixture found in a recipe for pecan rolls). OR RING MOLD Going into another type of dessert which uses the ginger . bread mix, we suggest it be baked in a ring mold and the center later filled with whipped cream or ice cream. You can bake the gingerbread in a sheet pan, and treat it as any other shortcake, using frozen strawberries now, fresh later. You can make breakfast bread from your gingerbread by sprinkling the top with butter, sugar and some nuts crumbled together. The batter is rather soft, so it may be wise to add this when the bread is set, giving it enough time to heat thoroughly and adhere to the gingerbread. For her daughter's wedding Mrs Gubbels wore a two-piece dress with green top coat and accessor ies to match. Her corsage was of white carnations.
