Tradition plays an important part in the choice of menu for the Thanksgiving dinner. Perhaps more than any other meal in the year, families want certain foods on that day, without much variation. But there are households, where traditions are just being made, or where some changes are demanded, and that is where we come in. Traditional foods for Thanksgiving include such favorites as Waldorf salad. '. dazed sweet potatoes, buttered Brussels sprouts, cranberry sauce and pumpkin pie all easily found in the cookbook. We've listed here a few which you may not have, or which you may like to try again: This cranberry relish, for which we've already had requests this year, may be served as a salad in lettuce' cups, in orange shells as a garnish and relish, or in gelatine for salad. You may add nuts if you like, or include some celery for bulk and to lighten the flavor a bit CRANBERRY RELISH 1 large orange '2 cups cranberries 1 cup sugar Grind whole orange and cranberries together, add sugar and set aside for at least an hour belore using. Add 1 cup nuts, andor a cup of celery if desired. A favorite of ours is this stirred cranberry sauce, which takes whole berries, but turns out to be a smooth, tender but firm jelly of smooth consistency. STIRRED CRANBERRY SAUCE 1 pound cranberries 3 cups sugar 2 cups water Cook cranberries and water together for about 10 minutes, mashing each berry with the back of a spoon or wire whisk. Add sugar and let cook for 10 minutes while stirring with the whisk or potato masher. Remove from stove and beat for 5 min utes while sauce is cooling. Do not double recipe if you want to use more berries, make the recipe twice. We have a special recipe for glazed sweet potatoes of which we are fond. (It is in our cookbook we offered some time ago and which is still available at the office on request, or by mail for 10 cents.) HONEYED SWEET POTATOES AND MACE Boil sweet potatoes in their jackets until almost done, peel while hot Cut in -inch slices and pack in a shallow pan. Make syrup of 2 cups honey, 2 cups hot water and stir until well mixed. Add 3 tablespoons butter, Vi teaspoon mace and 1 tea spoon grated lemon peeL Four syrup over potatoes and let simmer slowly on top of stove, turning and basting occasionally until potatoes are transparent. Sprinkle lightly with more mace Just before serving. .
