The Stat man, Salem. Oregon, Friday, August 29, 1952 S Rico, Peaches In Dessert Dish Rice Is a perfect foil for the delicious flavor of fresh peaches'. Here they , bake together in a cas serole to make a dessert. , RICE-PEACH DESSERT " 2 egg yolks 1 cup milk ' Va cup beet or cane sugar . ,3 cups cooked ricev 1 teaspoon vanilla - 5 large peach halves, sliced 1 cup bread crumbs Beat egg yolks, add milk and mix welL Add sugar, rice and vanilla. Grease a two-quart bak ing dish. Place half the peach slices on the bottom of the bak ing dish. Add half of the rice mix ture. Add the rest of the peach slices. Pour . In the rest of the rice mixture. Sprinkle the bread crumbs over the top. Bake at 350 . degrees until rice has absorbed the milk (about 30 minutes). Mrs. Clay is charged only with answering queries made in person or over the telephone. Queries sent in writing are relay ed to another section. Even then. Mrs. Clav reoorts that in 1951 her desk supplied In formation: to some 21,000 f visitors and tried to answer an additional 60,000 phone inquires from all parts of the UJS. and from Cuba, Hawaii and Newfoundland.. . A lot of other inquiries have nothing to do with the depart ment, but Mrs. Clay, a patient, friendly soul, tries to give the ans wers just the same. Mrs. Clay says lately she's been impressed with the ' numbers of people who are retiring, even at an early age, who ply her desk with requests for booklets on poul try, geese and rabbit raising, sub sistence farming or the raising of unusual crops such as herbs or holly-trees., CAKES AT NOON Drop cookies are easy to pack in a school lunch box. Freezing in Jars Proved to Be Practical by Experts Many homemakers who have stocks of glass canning jars would like to use these for home freezing, as an economy and convenience. But many have questioned whether such jars are suited to freezing and whether the glass will break at low freezing temperatures. A study at the Massachusetts Experiment Station of freezing various foods in the six types of canning jars most commonly used In homes showed that the glass is quite durable at freezing tempera tores and jars can be used to hold fruits in syrup or sugar for freez ing, also dry-pack vegetables, meats and poultry, and even apple Juice. But there was considerable breakage in freezing brine-packed foods in these glass jars. Best Lids Most convenient for freezing are the two-piece metal lid closures, especially on wide-mouth jars, because the flat lid allows for stacking In the freezer and these lids may be re-used for several seasons. Zinc covers became distorted in freezing and some reports to the Sta tion indicated that they absorbed off -flavors and odors from strong Havored foods. Bail-type jars cant be stacked, and in the tests took Jnore labor to close. The wide-mouth ball-type jars were difficult to open after freezing. Housewives who use glass jars for freezing need to allow enough headspace for the food to expand inch for pints and 1 inch for quarts. To prevent breakage, jars should stand upright and be placed In the freezer a few at a time with space around each for circulation of air-and even freezing. The least breakage occured in jars placed "ifr at the center of the freezing compartment away from the freezer " plates. Thawing as well as freezing should be even. Slow thawing in the refrigerator is recommended as best, especially for fruit. For more rapid thawing, place the jar in cold, slowly running tap water Turkey Buys GJood During Early Autumn Start turkey-shopping early, the U. S. Department of Agriculture suggests to homemakers. By mid August markets will have a great abundance of birds from this year's record-breaking crop. - Turkeys in this year's crop are estimated to outnumber last year's by about 15 per cent. In poundage the increase over last year may be around 10 per cent. Because tur key will be such a good buy this month, families with freezers may want to purchase now to freeze for later. This month the smaller birds will be most prominent on markets generally. They fit family platters and take less space in ovens and refrigerators than the big birds. But the large turkeys are a good choice for feeding a crowd. at harvest dinners, fam ily reunion picnics or other get-together meals. Best Way i To those homemakers who will be buying turkeys to put in home freezers, the specialists advise against stuffing the birds before freezing because of the risk of food poisoning. What may, -.seem like convenient advance - preparation, they warn, may be a health haz ard. Stuffing inside a turkey takes a long time to reach the freezing point. Meanwhile, bacterial growth may start and continue later as the bird thaws and then as it warms up slowly in the oven. One study made by industry showed that the center of the stuffing did not get hot enough to kill spoilage bacteria until long after the meat of the bird was well cooked. Another point to remember is that in preparing for the freezer, the giblets or gizzard, heart and liver should be wrapped separ ately and either frozen in a spearate container or placed in the cavity of the bird. EGG IS GOOD Here's a sandwich tip for moth ers who are once more getting into the routine of packing school lunches. Chopped egg becomes a favorite sandwich filling with the kids if you make it a chopped egg and ripe olive combination. The chopped- ripe olives are packed in 4 -ounce size containers for your convenience.
