CHOCOLATE MERINGUE CAKE .1 package (6-oz.) chocolate pieces S egg whites 1 cup sifted confectioner sugar 10 crackers, coarsely rolled i Vi teaspoon vanilla 1 pint vanilla ice cream ' Melt chocolate over hot water. Beat egg whites until stiff but not dry; gradually add sugar. Continue beating until stiff and satiny. Fold in the cracker crumbs, chocolate and vanilla. Pour mixture on to heaw brown paper and from into 2 8-inch cir cles. Bake in moderate oven (350 degrees) 12 minutes When cool, wet bottom cf brown paper and "peel off." Just before serving, fill with ice cream. Serves 8. FROSTY DRINK The young crowd will like this delicious frosty summer drink. Chill apricot whole fruit nectar in the freezing compartment of your refrigerator until the mixture is a thick mush consistency. Then tombine with ice cream and serve With a straw sipper. Oven-Cooked Meals t When a meat casserole is the choice for dinner, plan an entire oven -cooked meal around it, choosing foods which require the same temperature. Make the cas serole in the cool of the morning and refrigerate it until baking time. Vegetables can be steam cooked in a covered dish in the oven while the casserole bakes. Tuna Mold Uses Cracker Meal ; Tuna and crackers give this sal ad mold a nice flavor. It takes no gelatine, is merely pressed to form a mold. TROPICAL TUNA MOLD 2 7-oz. cans undrained tuna flaked , 3 cup cracker meal 1 cup sweet pickle, chopped 2 cups celery, diced 1 teaspoon salt 1 Va teaspoon pepper Y cup evaporated milk Vz cup mayonnaise Combine tuna, cracker meal, pi ckle, celery, salt, pepper, evapor ated milk and mayonnaise. Press firmly into melon mold; j chiLL Serve on a bed of lettuce garnish ed with radish roses. Accompany with crackers and slices of crisp raw vegetables. Serves 8. Gingerbread in Icebox Awhile; Here's a new idea a ginger bread that is stored in the refri gerator and kept until needed then baked: REFRIGERATOR GINGERBREAD H cup shortening 1 cup sugar 2 eggs j Vi cup molasses 2 cups sifted flour 1 teaspoon baking soda 1V4 teaspoons ginger ' Vt teaspoon cinnamon Vt teaspoon allspice V4 teaspoon salt Vi cup sour milk or buttermilk Cream together shortening and sugar. Add eggs, one at a time, beating after each. Add molasses. Sift together flour, baking soda, ginger, cinnamon, allspice ana salt; add alternately with milk to creamed mixture. Line 8"x8"x2" greased pan with greased waxed paper. Store in refrigerator until ready to bake. Bake at 350 de grees (moderate oven) 80 min utes. Cool 5 minutes. Remove from Pan. ! Drain in colander. Rinse with cold water: drain again. In a large bowL combine remaining Ingredients. Add cooked macaroni; mix lightly but thoroughly. Pack firmly into a 5 x 9-inch oiled loaf pan. Chill several hours. Vnmold on serving plate. Serves six to eight. WASHINGTON Women in Cuba have had little trouble in at taining positions of responsibility, says Doctora Margarita Ordetx (pronounced Ordets), one of the country's leading feminists. Dr. Ordetx. petite, smartly dressed, brown-eyed and blonde, a well-known journalist, is literary editor of the Cuban woman's ma gazine, Vanidades, and a member of the staff of the daily newspaper Prensa Libre. She is also professor of English at the Professional School of Commerce of Havana. " "Cuban women have distinguished themselves In many fields," Dr. Ordetx told me on a visit to Washington. "We have a woman senator, several women members of Congress. The undersecretary of ustice Is a good-looking young woman. A woman heads the Depart ment of Culture at the city hall, the Department of Fine Arts of the Education Department and the Corporation of Social Assistance." "We've had the vote since 1934 and we've taken full advantage of it," she added. This was not Dr. Ordetx' first visit here. She sad the distinction of being the first woman chancellor of an embassy when she served in that post at the Cuban mission here from 1923 to 1927. "That was 'my first and only diplomatic post," she said. "I like my magazine and newspaper job better. A graduate of the University of Havana with doctor's degrees In political, economic and social sciences, she writes poetry as a hobby and participates in amateur theatricals. Currently she is deep in plans for a huge benefit to raise funds to buy preventive medicine for underprivileged children in Havana. "It s hard to get government aid for children who are not actu ally ill," she said. "We think by using preventive measures we can keep many from getting to this stage.
