Uump Gun on Season for
Frothy, Frozen Desserts
It's coming Along to that time
when we'll be getting in practice
with the freezing tray to whip up
some frozen desserts. Ice creams,
sherbets and fancier frozen dish
es will soon be the ordinary thing
on the menus.
Jump the gun a bit on the
weather and practice up with this
dessert. It can. be made day
or two in advance of serving. Ac
company the ice cream with little
macaroons made with the egg
whites, or angel cake If you're
good at making them.
t Here's the recipe, designed for
crowd tor a smaller party,
ust divide in half.
MOLASSES PRALINE
ICE CREAM
8 egg yolks
1 cup molasses
2 cups light cream
3 teaspoons vanilla extract
2 cups heavy cream
1 cup chopped pecans or
almonds
Beat eee yelks: add molasses.
Cook over boiling water, stirring
rwistantlv. until silently tniCK-
eised. Cool. Add light cream and
vanilla extract. Pour into freez
ing trays; freeze slightly. Beat
with rotary beater. Beat heavy
cream until slightly stiff; fold into
partially frozen .mixture with
nuts. Pour into freezing trays oi
automatic refrigerator witn con
iml set at coldest ooint. Freeze
firm, (then cold control may be
returned to normal). Makes about
3 quarts.
The flavor of olumD raisins
and tart lemon juice accent each
other perfectly in this smooth and
custardy pudding.
FROZEV LEMON PUDDING
1 cup seedless raisins
1 cup granulated sugar
3 tablespoons cornstarch
2 cups water
2 eggs
lnteaspoon grated lemon
rind
1.4 cup lemon juice
1 cup table cream
Cover raisins with water and
boil 5 minutes, drain, cool and
chop. Blend sugar and cornstarch
with water, and cook until mix
ture boils and is clear, stirring
constantly. Remove from heat
and add beaten eggs, lemon rind
and juice. When cool add cream.
Turn into refrigerator tray and
place in freezing compartment
with control set at lowest temper
ature. Freeze until mushy, ? stir
ring occasionally with fork Stir
in raisins and freeze - to desired
consistency. Reset temperature
control to normal. Makes about
lV quarts.

lor Wiley, of nearby McDonald,
possibly the nation's oldest act
ive journalist, celebrated bis 96th
birthday not long ago by looking
forward to continuing his writing.
Wiley, who has written numer
ous books on local history, retired
several years ago as editor of the
weekly Elizabeth Herald. But he
continues a weekly column and
makes other frequent editorial
contributions. Asked his formula
for a long life, he replied:
"Just what the positives are I do
not claim to know. Some of the
negatives are: I dojiot allow my
self to worry, I do not get angry,
I do not hate anybody, I do not
use intoxicating drinks or tobacco
in any form."

Sandwiches to satisfy the hun
gry man -should be both appetiz
ing and sustaining. Suggested fill
ings include the following: grated
tuna with finely chopped celery
and mayonnaise; cream cheese and
jam; ground bologna with green
pepper and salad dressing; chop
ped hard-cooked egg with mus
tard; Worcestershire sauce, and
salad dressing; luncheon meats
with thin slices of Swiss cheese.
Variety breads, such as rye, whole
vheat. pumpernickel, and raisin,
give added interest. If the sand
wiches are to be carried, the flo
vors of the fillings will not mingle
if each sandwich is wrapped separately.

Delicious chocolate pies can be
made quickly and easily with
mixes. Prepare the filling and
crust according to package direc
tions. Then give the pie a gour
metish touch by topping with
whipped cream and slivered roast
ed almonds. Fold the almonds in
to the cream or sprinkle on top
whichever suits your fancy.
