Sanitation Salem is one of a limited number of communities- in the United States which have sanitation regulations "for public eating and drinking establishments that meet official Government standards. This was revealed recently by the U, S. Public Health Service in a study of progress made in restaurant sanitation In recent years. The report came from New York. ?, The cleanliness of Salem's eat lng places are attributable to two potent forces. One is the Salem City Council. The other is Wil liam B. Quinn, city restaurant in spector with the Marion County Department of Health. "Government regulations for eating and drinking places are stiff," says Quinn. "We follow those regulations. And the City Council has added a few extra precautions of its own. One of these is then twice-yearly physi cal examination demanded of all food handlers in Salem." Here are some points a cus tomer might check if he want to know li us favorite eating clace is llvirur up to- good sanita tion regulations: glasses and cups Inverted on the shelves, waitresses handling food with utensils, and picking up utensils and dishware by handles, individually wrapped confection straws, use of ice scoops and butter tongs. Protects Citizens The federal sanitation ordinance was developed as an aid In pro tecting citizens from food-borne diseases emanating from public dining and drinking places, it provides for the purity of edibles and beverages sold, their proper storage and handling and cleanli ness of utensils and equipment. A recent check of Salem res taurants showed them all to be in good shape sanitarywise, that is. seventy-lour had grade A cards, and 47 had grade "B" cards. Two restaurants recently were given "C" ratings by Quinn. Mast Attain "B" Standard A "C" rating, in health lan guage, denotes a very poor place at which to eat. In fact a res taurant may only remain in "C" grade for 30 days. By then it must either come up to 'B' standard or go out of business. -Actually there is little to choose between an "A" and "B" res taurants. Both are above re proach. The difference lies in certain refinements of construc tion or equipment which keep some establishments In a "deluxe" condition. Operating In the same manner as uulnn are three other sanita tion regulators working out of the county neaitn offices. These in clude Batty E. Cooper, city sani tary inspector; Ross F. Coleman, milk inspector for this area, and I. G. Lerman, Marion County sani tarian for the area outside Salem. In general, says Quinn, smart restaurant operators cooperate wholeheartedly with the sanitary inspector. Most know that clean restaurants mean better health for the community and better business for them. Monday The Associated Press average of 60 stocks broke through the previous high established last Oct. 15, and Tuesday it added an other 20 cents to send the average to $102.10, the highest mark since Sept. 17, 1930. Oils and rails started the up swing right at the start Tuesday, a leadership they displayed so strongly in the final hour of the previous market. Before the mid-way point, how ever, the railroads lost headway and finally turned aside to close at a net loss. Tuesday's strength appeared to have the same basis as Monday's in flationary aspects of govern ment fiscal policy as brought out by President Truman's b u d g et message plus internal strength of the market itself that has pro vided momentum for the rise.
