Versatile ! i Eggplants Make ; Main i Dishes By Msxlne Buren Eggplant, now in the market in small numbers and soon to be here in quantity, is the basis for many a main -dish. j Eggplant has always been fried in many families, who seem to think that the vegetable is only suited to this type of cooking. But jeggplant. is a !fa . vorite vegetable in Armenian cooking, and appears in many ways. . Eggplant may become an at tractive appearing and delight fully flavored! main dish when boiled for awhile (with skin on) then halved and center scooped out with a spoon or French ball cutter. The pulp is mixed with egg, crumbs,' cheese and season- ings, moistened with milk and baked until done, in a pain with a little water j (around an hour or less). . j ".-1 : Eggplant can be scalloped, too, to make a good main dish. Cook partially, run through a ' ricer, mix with egg, jmilk, breadcrumbs and seasonings, put into casser ole and cover! with crumbs land grated cheese, bake until brown, i Sliced eggplant can be clipped in a batter and fried in deep fat. Here's another dish to use egg plant: . . . I EGGPLANT SOUFFLE j. I tablespoons butter or substi- : . tute i !. ' 2 1 1 tablespoons flour ' cup milk: i cup cheese f cup breadcrumbs Onion, catsup ( i-' 2 eggs beaten separately L 1 eggplant i ; Cook eggplant, mash. Make treamsauce with butter, flour and milk. Mix with other in gredients,! bake 45 minutes at Ground lamb made into cakes ' becomes part of an extra fine main dish when! cooked Ar menian style Peel and boil egg plant until partially done, make f ,-ble, and put the seasoned lamb cakes in these slits. Put tne egg plant in a pan and bake until meat is done.
