Service Women What they can do What they're doing about ii Two more local women have enlisted in the Women's Army corps for service .with the army air forces. These new Air Wacs ' are Mrs. Mary McElroy of Salem and Mrs. Averill Meeker of Dal las. Mrs. Meeker, a graduate of Dallas high school, has reason to join the army air forces; her husband, the late Lt. Melvin Meeker, was killed when the j bomber he was 'piloting crashed j during a test flight Recommend-! ed as a medical technician, Mrs. Meeker will be doing an im portant job in helping keep oth er airmen aloft. She is the daughter of Mrs. Sadie Morris of 2045 State street, Salem. ! Mrs. Mary McElroy, for 23 years a resident of Salem, will be leaving early in April for Fort Des Moines, Iowa, to take her basic training as an Air Wac. . For 19 years Mrs. McElroy has worked in the State Land office, where she has been in charge of the tax department. The ad ministrative field has been, rec- i ommended for Mrs. McElroy be- j cause of her business background and her training at the State Science school, Wahepton, North Dakota, and at the Capital Bus ' iness college in Salem. Miss Kathryn Hill, daughter of Mr. and Mrs. Elmore Hill, is leaving today for Portland to be gin her training, with the United States Cadet Nurses corps at the University of Oregon medical school. PAN ROASTED VEAL WITH WALNUT SAUCE; I 2 pound piece! of veal 1 small piece raw ham -1 tablespoon shortening Water to half -cover meat . 1 teaspoon salt -. teaspoon pepper I 2 tomatoes, diced . 1 small onion, sliced i - -1 tablespoon minced parsley V cup flour 1 -V cup water cup walnuts I;1- ' L J.4 cup raisins C; . - - . 2 tablespoons chopped citron -2 tablespoons sherry - : . Cut the ham -into slivers. Pierce the veal at intervals with a pointed knife , and insert the slivers of ham. Sprinkle the veal with salt and pepper.. Melt the , shortening in a heavy saucepan . and brown the veal on all sides, - Pour in sufficient boiling water , to come half-way up the meat: Add tomatoes, onion and pars ley. Cover and simmer gently for one hour, turn the veal over and continue simmering until the veal is . tender, : about . another ' hour.. , - - Remove meat to a hot platter and keep warm. Mix flour-and : water, beating with a rotary beater to avoid lumps and strain , into the liquid infthe paii.' Stir until it boils and thickens, add walnuts,' raisins, 'and sherry, and season to taste with more salt, if necessary,! and ; pepper. Sim' mer five minutes. For. four: gar nish the meat with parsley and serve the walnut sauce separate ly.
