She will return shortly after the New Year. ; Today's Menu ' Coconut pudding is the deS ", aert for today and will make use f the fresh coconut available - at the grocer's. " Green bean salad Broiled lamb cakes , Glazed apples slices Browned potatoes Buttered spinach Baked coconut pudding The coconut we buy in the stores is actually the kernel of the nut, and you may have to dig it out of the brown coconut fiber covering. Use a heavy blunt knife or a screwdriver and a hammer to get the outside shell opened up. When you get the brown coconut out, punch two of the "eyes with an ice pick and pour out" the 4,milkw to use, as a drink. Then split the nut into pieces,using the punched holes as a starting point. Pry out the meat, pare off ; the thin, brown skin or not, as, you prefer, and grate it on the finest grater. BAKED COCONUT. MJBDING U cup flour cup sugar " teaspoon salt 2 egg yolks Z cups milk - Peeled rind 1 lime . T teaspoon vanilla 1 cup grated fresh coconut. ' 2 egg whites . Vi teaspoon salt 4 tablespoons sugar "'. Mix flour, sugar and salt Add slightly beaten eg yolks and mix to a paste Scald milk . in double boiler, stir into flour and egg mixture. Return to double boiler and stirr constantly until thickened. ' Peel lime, keeping rind in one piece if possible. Add to thickened custard. Cover and cook for 15 minutes. Remove lime peel, add vanilla and stir in freshly grated coconut Pour into a baking dish, top with meringue made ' of egg whites, aalt and sugar. Bake in a slow even (325 degrees) for 15 min utes or until lightly browned. Serve warm or cold. Anderson gave a group of numbers, and Miss Eunice Torvend ga ve ' a group of piano numbers. Rev. Mr. Fuhr served as toastmaster and responding to his 'call were j Mrs. Ed Holden, Alf O. Nelson and M.G.i Gunderson., Mr. Gun derson, as 5 chairman of the church board, presented the hon 'ored couple with a chair from - the congregation. Mr. Satern spoke for the family, thanking the congregation for its gift From, 3 to 8 o'clock open house was held at the Satern home on I North Water street Pouring during the afternoon and evening, were Mrs. O.
