Cubed beef steak is one of the very modem pan broiling steaks. Jtound or shoulder steak is scored or "cubed" to cut the connective tissue and thus tender the meat Cubed Steaks should be pan broiled In a heavy skillet until well browned. A bit of discretion is needed to not over cook and dry out this meat The onion rings were French fried to give a crusty brown coating to these rings of natures gift " - J ''C- . It was browned on all sides in a little lard in a heavy kettle, then simmered gently in just enough water to half cover the meat True success demands a Judicious use of water, d blending of seasonings, and long 'slow cooking. It's not a time for speed. Carrots, onions, and other vegetables may be cooked in the rich broth around the meat for 30 to 40 minutes before serving.
