( 1-4 cup of salt to 1 t at water); Drain off tne brine, pack In stone Jar and pour oxer the fruit a pickling syrup made from the following Ingredients: 1 Quart best cider -vinegar; I pints of sugar: 1 teaspoon whole etores; 1 tablespoon of broken cinnamon stick. Tie spices ta a cheese cloth. Add to vinegar with sugar. Boil fire minutes. Place a pints oyer the fruit. , Set one pound weight on it. Cover Jar and let stand in cool place for three days. Drain off syrup. Re beat with spice bag. Put In fruit, beat well in the symp, seal in glass Jar. (This is enough for 8 qts. if a large fruit.) Variation 1: After heating syr up to the boiling point, let boll slowly for 30 minutes with spices Heat fruit in syrup, seal at once. This seasoning is not bo well done as by tbe first method. (Enough for i-7 pounds fruit). , Variation 2: Cook fruit In syr up until It can be pierced by a straw, seal at once. Variation 3. Brown sugar may do usee ana the spices left loose. Pickled Fruits Pears, peaches and erabapples may be prepares la the same way without soaking In salt solu tion, however. Oven Pickled Fruits Pickled peaches: Scald 1 to minutes to loosen skins, dip Quickly In eold water.1 Skin and sack in sterilised Jars to within one inch of top, adding a few dotes and bits tf stick cinnamon. Pour ever all tbe boiling syrup. (given above). Set lid on loosely. Place jars In broiler pan with about 1 Inch of boiling water, and set all in SSt degrees even for 10 minutes for Qt. jars and 49 min utes for pints. Remove and seal immediately.. Plekled Pears: A small rather hard pear . Is best Leave stems on. Pare If akin Is tough. If large pears are used pare, ', eore and quarter. Scald 1 minutes, cold dip, pack. Pour ever syrup and proceed as with peaches. Pickled Crabapples i Use small red erabapples. Leave whole with stems and shins on. Scald 1 inutea. Cold dip. pick whole in sterilised Jars, proceed . as for peaches. Corn Relish 13 ears, of corn, 2 euarta ripe tomatoes; 1 Quart onions; 1 quart cucumbers; green peppers;- H small head cabbage: I quart vine gar; S cupa sugar; 1 teaspoon :eeU ery seed: S teaspoons mustard seed; U cup salt; grind all vege tables together except corn, eom- bine and eook one hour. Seal in fruit Jars. . . - . Carrot Marmalade -Wash, scrape and put through food chopper, t pounds raw ten der young carrots. Cover with water and eook until tender. Put .through strainer to make smooth pulp, or eook young carrots until tender, cut in fine strips. Add S pounds sugar, the grated rind and Juice of lemons and eook until thick and clear. When nearly done add pound of blanched ground almonds. Pour Into Jelly glasses, seal with parrafin. (Friend Hub by won't know it from orange marmalade.) Alsace Conserve This was given to us and is so good that we Just must pass it on. use equal quantities of rhubarb, strawberries and pine apple. Cut rhubarb In bits. Stem and halve the berries. Cut the pineapple which may be either fresh or canned, Into shreds. Mix fruits and measure. Add 3-4 cup sugar to 1 part fruit Simmer slowly on top of range or in oven of about 300 degrees, until thick. Then add pound blanched and shredded almonds. Cook IB min utes longer. Pour in sterilized Jars and seat We do think these preserves are no trouble at ail If oven, cooked. Oh, bow we hate the watching and stirring lest the lam should scorch' on the old hot range.
