1 cupful cream cheese.

seasonings. Butter the slices of
bread and then spread halt t of
them with the cheese mixture.
On top of ; these place slices of
crispy ; broiled bacon. Put under
the - broiler just : long enough
to melt the cheese. Cover with
the . other' slices of buttered

Pea and Egg Salad . .
1 head lettuce.

stewed. peas, wash, in cold water.

Arrange the warm boiled rice
in a serving dish. Pour over it
a sauce made bv thekeninr the
milk with flour and adding lbe
other ingredients.- The egg should
be cut in, thin .slices. Macaroni
may be substituted for the . rice.

4 table spoonfuls flour. . .
8 tablesnoonfuls cornmeal
1-b pound sliced bacon. - '
3 tahlespoonfuls coffee. V '
1 teaspoonful salt.' "
While frying the "bacon let the
liver stand in boiling water. Then
drain Sit., roll in the flour . and
corn meal in which the salt has
been mixed, and fry in the bacon
fat. When brown on both sides
add the 'coffee Infusion and cover
the pan tightly for three minutes.
Serve the liver garnished with
bacon and parsley.
Honey Salad Dressing
3 egg yolks.' '
3-4 cupful honey.
1' tablespoonful sugar.
Juice of 3 lemons. -,
3-4 cupful whipped cream
Beat the er yolks and ; add
the , honey, sugar. and lemon

1-2 cupf ul candied - fruit.
, 1 teaspoonful lemon extract.
Combine the rice, sugar, lemon
extract, cream, and the well beat.

Place in a buttered baking dish
and bake in . a moderate oven.

3 cupf uls boiled rice.
1 large onion.
1 ripe red. pepper.
1-2 teaspoonful salt.
1-2 cupful olive or cooking oil,
1 tablesoonf ul sugar.
Dash pepper.
Place the oil in a -frying pan
and add to it the onion and red
pepper, cut in . thin slices. Cover
and cook gently 15 minutes. Then
add the rice, salt, sugar, 'and
pepper. Simmer for 30 minutes.
