So far aa the consumer is concerned, it would be wise to forget about colors in eggs. Chemical examination shows ab solutely no difference in the taste or strength of the white or brown ess and it appears that the white ess is bringing a premium simply because it has a pretty shell. This is not eaten. If consumers are real wise they will bay mixed col ors or any color of fresh eggs that they can secure cheapest. That white eggs have nothing on the brown ess is indicated by the fact that while New York prefers the white ess and is paying a big premium for it, Boston and New York prefer the brown ess and pay the most for that color.
