Boll together a peck of unpeeled to
matoes and six peeled and sliced white
onions. When soft, strain and return to
the kettle, adding three bay leaves, a ta
blespoonful each of powdered cloves,
pepper, and mace, a tuhlespoonful each
of sugar and salt, a little paprika and
a tablespoonful of celery seed, tied In
a muslin bag. Boil for five or six
hours stirring often. At the end of
that time take out the celery-seed bag,
and pour In a pint of vinegar. Boll up
hard again and take from the Are.
When cold, bottle and seal.
Rich Cncuniber Sonp.
Pare and cut up two encumbers of
medium size, two large onions and the
white part of a head of lettuce. Place
the vegetables In a saucepan with 2
ounces of butter and stew gently for
three-quarters of nn hour, stirring from
time to time. Add a quart of strong
stock, 2 ounces of breadcrumbs, a
tablespoonful of chopped parsley and
pepper and salt to taste. Simmer gent
ly for two hours, and at the last mo
ment stir In 1 ounce of butter rolled In
flour.

Teel ripe peaches, halve them and
fill a deep earthenware baking dish
with them, leaving a few of the stones
to give flavor. Half fill the dish with
Ice water, sprinkle sugar over the
peaches, then place over them a sheet
of light but thick pastry. Pinch this
down over the edges, slash the center
crosswise, and prick well. Bake till
brown, then serve hot or cold wltb
cream.

Sponge Candy.
Put together In a saucepan two sups
of granulated sugar, one cup of New
Orleans molasses, a half cup of water,
a tablespoonful of vinegar and a small
bit of butter. Boil until a little drop
ped Into cold water Is brittle, then take
from the fire, stir In a spoonful of
baking soda, and, while foaming, turn
Into greased dishes to cool. Do not
pull.
By the addition of "20-Mule-Team" Borax to
the water in which carriages, bicycles, automo
biles and other vehicles are washed, the dirt and
grease will be quickly removed without destruc
tion of the varnish; in fact, the varnish will be
benefited by the process ordinarily.
The cow's udder Is kept in a clean, healthy and
imooth condition by washing it with "20-Mu!e-ream"
Borax and water. This prevents rough
ness and soreness or cracked teats which make
milking time a drtad to the cow and a worry to
the milker.

Chop Suey Jam.
Three pounds of rhubarb, cut Into
small pieces ; three pounds of granu
lated sugar, one-lmlf pint of water, one
package of seeded raisins, three oranges
with the rind, all cut Into small pieces,
a half-pound of shelled English wal
nuts, cut Into small bits. Boll all to
gether for three-quarters of an hour,
then put Into jelly glasses.
Floating Island.
Into a pint of rich cream, sweetened
to taste, stir sufficient currant jelly to
make It a pretty color. Spread slices
of sponge cake with marmalade, pile
them evenly in a glass dish and pour
the pink cream over them. Flavor an
other pint of rich cream with lemon,
sweeten It, and whip to a stiff froth,
then heap on the cake.
'Poor Folks' PaddlnK."
To four teacupsful of flour add a
cup of finely minced suet, a teacupful
cf molasses, a teaspoonful of baking
snda dissolved, a cup of water, a pinch
of salt, a tablespoonful of cinnamon
and one cup of raisins, dredged with
flour. Roll lu a floured cloth for two
hours." Turn out and serve with a liq
uid sauce.
Uncooked Chocolate Frontline.
Melt one square of chocolate. . Mix
two cups of confectioner's sugar with
a little milk or water, or, better still,
with the white of nn egg. Add the
incited chocolate anil beat until smooth.
If "this mixture Is too stiff to spread
easily, add a fijw drops of water and
put on cake layers.
F.ffff Lemonade.
Make n thin syrup by boiling one and
one-half pints of water with two cup
fuls of sugar. Add the grated rind of
one lemon and Juice of two. Cool with
Ice. Just before serving whip lightly
In' two eggs beaten separately and a
small quantity of bicarbonate of soda.
Serve while foaming.
Canned Plum.
Cnnned blue plums will make de
licious winter nits. To seven pounds
of fruit add three w one-half pounds
of brown sugar, one pint of good vine
gar and one ounce each of cinnamon,
cloves and allspice. Scald them about
three times and jar flieiu.
