THE conning which wo did this year was In the way of an experiment. During O. H. Benson's visit to Oregon In 1914 I had tho pleasure of hearing him lecturo at Dallas on tho nos nihilities of canning and decided then tliat I should liko to seo It tried out hero I succeeded In getting mo ,rl8 "f dalo. Or., to plant a gardon to furnish the products to bo canned. They planted tomatoes, Leans and corn, as thoso wcro tho vegetables that I thought best to tr. Tho tomatoes wero a failure, owing to the dry season, bugs, etc. The corn did llttlo better, but wo put up a fow Jara just to try our luck, and they keep per fectly. Evcryono who hao eaten this corn says It Is far superior to tho canned corn put on tho mnrkct. Tho beans did well and I succcoded In trying my canning experiment with them with tho following results. Thoro wore 10 rows 150 feet long and threo feet apart, using C000 foot of ground, or ap proximately one-clghth of an aero. I fig ure It nt this In order to allow for what ground must bo left at tho end of tho ?ows, edges, etc. From this patch wo sold 150 pounds of green beans In no innrket at 4 cents per pound, which brought us $0.50. This sum, with what wo used for tho tablo, I considered nmplo to pay for rent on ground, culti vating, harvesting otc. So what tho canned product brought above ho cost of Jars, cans, etc., was net profit. Sho canned n variety of products In a steam pressure canncr with excellent suc cess, nnd, at n great saving of tlmo. Tlio fact thnt tho beans wcro canned in u minutes in tho canncr, against three- of four hours by tho open ltottlo motliod, demonstrates very clearly tho stiporlorlt of this method. Miss Koyt wound up her canning this yenr with a public demon stration at tho Polk County Fair. This was tho first demonstration of its Klna over held In tho stato that I hnvo over heard of, and, this dono by an 11-ycar- old girl. A "Canned" Slipper. Ono of tho novel things wo did with this mnchlno was tho cooking of supper ono evening. Tho mnchlno was sot up in a dug-out furnaco in tho bnckynrd nnd Mrs. Koyt asked us If wo could cook po tatoes In It. Ono thing led to nnothor until wo had potatoes, beets, a plcco of meat, and, to top It off, a enko in tho ma chine Wo loft theso for 40 minutes un der 10 pounds pressure nnd they woro all well cooked. Tho cako was flno nnd tlio kitchen wns not heated up. After this, wo did qulta n bit of cooking. Every farm homo should hnvo ono of these machines, which cost from $5 to SI 5, to savo tho vegetables and fruits which would otherwise go to waste. A number of tho schools of this county nro organizing canning clubs and thoy hnvo great possibilities. Somo nro pre paring to gather wild blackberries, which are quite plentiful In tho mountains, and, which will undoubtcly bo good salo. Oth er schools aro planning to rnlso vogotnblcs and can thorn during vncatlon for not lunches during tho coming school year. This, I am very much Interested In, for tho hot lunch Idea Is spreading fast In this county nnd this will glvo plenty of good, cheap matorlals and a uso for tho vegetables that tho school gardeners grow, of which, so ninny nro wnsted.
