Iowa Homeitead: Nov that small fruits art becoming mora abundant, presorting will be the order of the day. Housekeepers who dislike the tedious, old time fashion of clarifying sugar and bailing the fruit will appreciate the following two recipes, no fire be ing needed in their preparation. The first is for "tutti fruitti," and has been repeatedly tested with unvarying sue cesa. The second is from an English correspondent: 1. Put one quart of white preserving brandy or arrac de Batavia in'o a two gallon stone jar that has a tightly fitting top. Tlicn for every pound of fruit in prime con dition and perfe dry, ctly which you put in the brandy or arrac, use three quarters of a pound of granulated tu garj ktir every day so that the sugar wilf be dissolved, URing a clean wooden spoon kept for the purpose. Efery rort of fruit can e used, beginning with strawberries and ending with plums. Be sure and hare at least one !eund of black cherries, as thef make the color of the preserve very rich. is' ran berries, black: berries, rasp berries, apricots, cherries, (sweet and eour), pcaoher, plums, all used, and if you like, currents and grapes. Plums and grapes should be peeled and seed ed, apricots and peaches peeled and cut in quarters or eighths or dice; cherries also must be seeded. The jar must be krpt in a cool dry place, and the daily stirring must never be forgotten,, for that is the seertt of success. You may uce as much of one sort of fruit as you like, and it may be put in from day to day as you happen to have it. Half the quantity of spirits may be used. The preserve will be ready for use within a week after the last fruit is put in, and will keep for a number of months. We have found it good eight months after making. 2, Take some pure white vinegar and mix with it granulated sugar until a syrup is formed quite free from acidity. Pour this sjrup into esrthen. jars, and put in it good, perfectly ripe fruit -gathered in dry weather. Cover the jars tight and put them in a dry place. The contents will keep for six or eight months and the flavor of the fruit will be excellent. A Circular Letter from the State Board of Immigra tion. For the purpose of fitting out a -specimen car, which, through the courlejy of railway officials controll ing roads centering here, and radiat ing from Chicago, Des Moines, Detroit, and other places is to be sent this sum mer on an advertising mission through the agricultural districts of several of the States east of the Rockies, and" to provide material for such a rs arrange ment of the exliil'it in the rooms of the board here, as will make it attract ive and informing to visitors; the Commitkioners most respectfully ask )our valuable assistance in the collec tion of sample products. It is desirable to have specimens of all the cf reals, rasnes, minerals, wood., toils, winter keeping fruits an J veget ables, (green dried or preserved,) from ach county and locality in the State It is nlfo dekirablp, that specimen should be in the main, representative of a fair average of the crop, or growth Specimens sent, should bear the name and county address of the donor, and be carefully packed for the shipment to this city, where they will be arrang ed for the car. Added to the collection of a county, there should be a carefully written de scription, for distribution from the car. Through the courtesy of the Oregon t California, and the Oregon Railway and Navigation companies' managers, all specimen products directed to the president or the secretary of tbe Ore gon State Board of Immigration, will be carried free of charge.
