How t Keep Buttes. It is the easiest thing in the world. Simply put it in clean j irs aud cover with a strong brine. This will keep your butter a year, fresh and sweet, a we know by experience. It is almost equally a.s good to put in oak casks bended tight. This is equivalent to eanning fruit. The brine in case ol the jar acts as a heading, keeping the air out. But butter should be made well ; we never experimented on poor butter. Work out the butter milk until you have only pure binds. clear us rain-water ; but do not work so much as to break the rain, in which case you have a tough, heavy article In widter and grease in sum mer. Skimmed milk which has been standing fr twenty four hours and is of 1,038 spe cific gravity, sets in four hours; with 50 per cent of water in one hour, and with 70 per cent in thirty minutes.
