The most common methods of cooking tough cuts are braising, pot roasting, stewing and fricaseetng. Methods of cooking tender cuts are broiling, roasting and frying. Washing spinach in warm water the first time loosens up much of the sand and dirt. If it is desirable to keep scrambled eggs hot for a time after r __r___ preparing, they may be cooked in a double boiler and kept there until time for serving. Cake may be kept fresh when only a small amount is eaten at a time by cutting the desired number of slices from the center of the cake. Push the two remaining pieces close together like a whole cake, and this will keep it moist and soft for several days.
