lor tbe milk, between the dairy
and tbe condenser. In other words,
the loss is due to a failure to prop
erly cool tbe milk at tbe dairy, and
to keep it cool en route to tbe con
denser. He states that aB soon as
the milk is taken from tbe cow's
udder, the can containing it should
be placed in water, and the milk
shoald be stirred until it reaches a
temperature of GO degrees. In
transporting it to tbe condenser,
tbe cans Bhould be covered with
wet sacks during hot weather, when
the temperature is above 70 de
grees. Nor Bhould it stand ex
posed in cans when the tempera
ture is above (10 degrees, winter or
summer. A drop of milk, magni
fied (iiiO times, plainly shows tbe
butter fit cells. Accidity iu milk
increasee after leaving tbe cow, and
the cooling process checks the
above tendency. Accidity weakens
the butter fat cells, and a sample
taken with the eample taker, causes
the granules of butter fat to slip off
the taker, and thus reduces the
value of the test by which the
whole amount of milk is judged.
That is why many people do not
understand the variation in milk
