2 onions, chopped
1 stalk celery, cu t into 1 inch pieces
2 carrots, peeled and sliced into 1 inch pieces
2 potatoes, p eeled and cubed
3 tablespoons all-purpose flour
3 cups chicken stock o r broth from turkey leftovers
1 /4 teaspoon dried m arjoram
2 skinless, boneless turkey breast halves, cubed
1 green bell pepper, diced
Directions
1. Prepare broth using lefover turkey carcass if avialable,
otherw ise, ju s t do the follow ing.
2. M elt the bu tter in a pot over m edium heat. Place onions in the
pot and co o k until tender. S tir in celery and carrots, and c o o k until
tender. S tir in the potatoes and flour.
3. Pour in the chick en /tu rk ey stock, and season soup w ith
m arjoram . Place turkey in the pot, and bring to a boil. R educe heat
to low , cover, and sim m er 30 m inutes.
4. M ix the green bell pep p er into the soup, and continue cooking
10 m inutes, until p ep p er is tender.
