6. Sauté chicken, 3 o r 4 p ieces at a tim e over m edium heat until
g olden and crisp, tender inside, but not dry, about 5-7 m inutes
on each side, depending upon size o f chicken pieces.
7. D rain on p ap er tow els; keep w arm in a 250°F oven until
rem aining pieces are cooked. Serve ho t w ith lem on quarters.
