3. Sprinkle fish inside and
out w ith salt and pepper to taste.
4. C om bine m ushroom s, onion, parsley, cheese, lem on peel,
and juice.
5. Spoon m ixture into fish cavity.
6. Pour butter over fish and top w ith lem on slices.
7. C over w ith another thickness o f foil and carefully seal all
sides com pletely.
8. Place on grill four to six inches from glow ing coals.
9. Turn after 30 m inutes and cook 20 to 30 m inutes longer.
10. Il cooking on sm oke-type grill, open foil during last ten
m inutes and close grill c over so sm oke flavor penetrates fish.
11. Serve w ith choice o f sauces.
Makes 10 to 12 servings.
