4 4-ounce cube steaks
3/4 teaspoon freshly ground pepper, divided
1/2 teaspoon salt
2 tablespoons extra virgin olive oil, divided
X ounces sliced m ushroom s (about 2 1/2 cups)
1 large shallot, thinly sliced
1 tablespoon all-purpose flour
I teaspoon chopped fresh thym e or I /4 teaspoon dried
1/2 cup dry sherry (see Note)
1/2 cup reduced-sodium b e e f broth
• 2 tablespoons reduced-fat sour cream
Preparation
1. Sprinkle steaks w ith 1/2 tea­
spoon pepper and salt. Heat I
tablespoon oil in a large nonstick
skillet over m edium heat. Add
steaks and cook, turning once,
unt i I browned and cooked through,
1 to 2 m inutes per side for m e­
dium . ( If necessary, cook in two
batches.) T ransfer the steaks to a
plate and cover to keep warm.
2. Add the rem aining 1 tablespoon oil to the pan. Add m ushroom s,
shallot and the rem aining 1/4 teaspoon pepper; cook, stirring, until the
m ushroom s are golden brow n and release their liquid, 4 to 5 m inutes.
Sprinkle w ith flour and cook, stirring, for 1 m inute. Add thym e, sherry
and broth; bring to a boil and cook, stirring, until thick enough to coat
the back o f a spoon, about 3 m inutes. R em ove from the heat; stir in sour
cream . Return the steaks (and any accum ulated ju ice) to the pan and turn
to coat w ith the sauce. Serve the steaks w ith the sauce.

Not so long ago, D over sole m eant an overcooked fillet sw im m ing in
butter, dotted w ith tasteless dried herbs and soaked in too m uch lem on
juice. But sole deserves a com eback: it can becom e a satisfying,
sophisticated, one-skillet dinner w ith very little effort. The recipe can
easily be doubled.

10 ounces Pacific sole, (see N ote) or tilapia fillets
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 teaspoons unsalted butter
1 m edium shallot, m inced
2 tablespoons w hite-w ine vinegar
2 tablespoons chopped pecans, toasted (see C ooking Tip)
2 tablespoons chopped fresh dill
Preparation
1. U sing a sharp paring knife, rem ove the skin and w hite pith from
orange. Hold the fruit over a m edium bowl and cut betw een the
m em branes to release individual orange sections into the bowl, collecting
any ju ic e as well. D iscard m em branes, pith and skin.
2. Sprinkle both sides o f fillets w ith salt and pepper. Coat a large
nonstick skillet w ith cooking spray and place over m edium heat. Add
the fillets and cook 1 m inute for sole or 3 m inutes for tilapia. G ently flip
and cook until the fish is opaque in the center and ju st cooked through,
I to 2 m inutes for sole or 3 to 5 m inutes for tilapia. D ivide betw een 2
serving plates; tent w ith foil to keep warm .
3. A dd butter to the pan and m elt over m edium heat. A dd shallot and
cook, stirring, until soft, about 30 seconds. A dd vinegar and the orange
sections and ju ic e ; loosen any brow ned bits on the bottom o f the pan
and cook for 30 seconds. Spoon the sauce over the fish and sprinkle each
portion w ith pecans and dill. Serve im m ediately. M akes 2 servings.
