(Indian Eggplant)
“This is a very simple, quick and more
importantly authentic Indian side dish o f
grilled eggplant and tomato. A Great
Dish! Not as spicy as I'd thought it would
be, but it is healthy and quite delicious. ”

1. Preheat oven broiler. Place eggplant into a roasting pan, and broil 5 minutes,
turning occasionally, until about 1/2 the skin is scorched.
I eggplant
1 tsp. vegetable oil
1 m edium onion, chopped
2 rom a (plum) tom atoes, chopped
1/4 tsp. ground cayenne pepper
2. Place eggplant in microwave safe dish. C ook 5 m inutes on HIGH in the
m icrowave, or until tender. Cool enough to handle, and rem ove skin, leaving
som e scorched bits. Cut into thick slices.
• 1/4 tsp. salt
3. H eat oil in a skillet over m edium heat, stir in the onion, and cook until tender.
Mix in eggplant, and tomatoes. Season with cayenne pepper, salt and black
pepper. C ontinue to cook and stir until soft. G arnish with cilantro to serve.

Directions
1. Cut cucum ber in half lengthw ise; scoop out seeds. C hop cucum ber
(about 1-1/4 cups).
2. In medium glass or plastic bowl, mix cucum ber, onion, salt; let stand
10 minutes. Stir in tomato.
3. In a small bowl, mix rem aining ingredients except yogurt; toss with
cucum ber mixture. Cover; refrigerate at least 30 m inutes to blend flavors.
Drain thoroughly.
Just before serving, fold in yogurt. Store covered in refrigerator.

DIRECTIONS:

until seeds crackle and spices turn one shade darker and the m ixture has
a nutty, sweet aroma. T ransfer to a bow l; cool 3 to 5 m inutes.
2. Place roasted spice blend in spice grinder. G rind until m ixture looks like
the texture o f finely ground pepper. Store in airtight ja r at room tem pera­
ture for up to 1 month; (the longer stored the less robust the flavor).
