Available year-round, pistachios are excellent added to vegetables or fish
butter sauces, favorite baked goods, salads or simply served eu natural.
3 cups shreeded sharp Cheddar cheese
I package (8 oz.) cream cheese, softened
1 to 2 tablespoons dry sherry
I teaspoon mustard
3 drops bottled hot pepper sauce
V* cup chopped shelled Pistachios
Crackers or assorted raw vegetables
Blend togetoer cheeses, sherry, mustard and hot pepper sauce. C hill
about
hour or until firm enough to handle. Shape into a ball and roll in
pistachios. Serve with crackers or raw vegetables. Makes I ball.
Tip. Pistachio Sherry Cheese Ball may be made ahead, wrapped and
stored in the refrigerator. Bring to room temperature before serving.

Chicken Vegetable Soup
1 can (16 oz.) Pink Kidney Beans,
Caribbean Style
1 can (8 oz.) Tomato Sauce
1 tablespoon Sofrito
1 pound fresh okra, sliced
In a large saucepan, combine all
ingredients. Bring to bo il; reduce
heat. C o o k over m edium heat 10
minutes or until okra is tender. Stir
occasionally. Makes about 9 cups, 8
servings.

Cook rice according to package
directions. Meanwhile, in saucepan,
combine soup, green pepper, onion,
tom ato and sazon. Bring to b o il.
A dd shrimp; reduce heat. C ook
over low heat 10 minutes or u n til
shrimp are done; stir occasionally.
Serve over rice. Makes about 3 cups
shrimp mixture; 3 servings. Recipe
may be doubled.

Vi cup chopped frying peppers
Vi cup chopped onion
Vi teaspoon ground oregano
1 tablespoon olive oil
1 tablespoon sofrito
2 cans (19 oz. each) Chunky Beef
Soup
1 large eggplant (about 1 Vi pounds),
peeled and diced
In a Dutch oven, saute peppers
and onion with oregano in oil until
onion is lim p. Stir in sofrito. Add
soup and eggplant. Cook over low
heat 20 minutes or until eggplant is
tender; stir often. M akes about 7
cups, 6 servings.
