This recipe from the Kraft Kitchens takes the flavor of favorite Tex-Mex dishes and combines them in a made-in-minutes entree. Tbxican Salad starts with browned ground beef. A can of kidney beans is added, and the mixture is simmered for ten minutes. Then the mixture is tossed with shredded lettuce, chopped tomato and avocado, shredded cheddar cheese, and sliced green oruon. Further, only eight o f the 46 hypertensive subjects reported consum ption o f m ore than one gram of calcium per day while 18 of the 44 normotensive subjects con sumed more than one gram , D r. McCarron said. M cC arron. His study does not dis pute the fact that hypertensive per sons should lower th e ir in take o f salt. But, he said, there is no real proof that persons who are not hy pertensive should place salt any higher on their list o f worries than obesity, genetic predisposition or calcium deficiency. Although hypertension in some societies appears to be associated with the level o f sodium in the diet, there are other cultures that have a rem arkably low prevalence o f hy pertension in spite o f high sodium intake.” In support o f his research, D r. M c C a rro n has noted that A m e ri cans have not changed the level o f their salt consum ption in the past 60 years but they are consuming less calcium. Also, D r. M cC arro n ’s ex periments with laboratory animals have shown that the level o f dietary calcium “ is an im portant factor in determining what happens to labor atory animals that have high blood pressure. Adding extra calcium to the anim al’ s diets reverses the hy pertension." D r.
