Ground beef is a bargain, because there is no waste. It is liked by almost everyone. And ground beef can be used in a myriad o f recepies, such as these meat loaves. Meat loaves, as most cooks know, are extenders that stretch ing redi ents to serve more people or to pro vide more generous helpings. Meat loaves also give cooks a chance to be imaginative and to season creative ly. H ere is a meat lo a f recipe that does all o f the above. Meat loaves— even the rolled ones — are sim ple to prepare w ith this step-by-step recipe. Moistened and held together with condensed soup, they’re certain to be just right every time they’re baked and served. T h is in trig u in g fillin g swirls w ith in M exican M eat L o a f and features cornbread s tu ffin g mix Rolled Mexican Meat Loaf makes a low-cost main dish. com bined w ith whole kernel corn and sweet peppers. T h e meat is ground beef and the liq u id that keeps it most w hile cooking is condensed c h ili beef soup. The rem aining soup, flav o red w ith added tomatoes and green chilies, becomes a sauce for the lo af that is assembled je lly -r o ll fashion and topped with melted cheese. W hether they’ re prepared in the usual m ethod o r rolled w ith fla ir, meat loaves are the ideal dinner entree for groups o f six to eight - family or friends. MEXICAN MEA TLOAF Vi cup chopped onion I tablespoon chili powder V4 cup butter or margarine I cup cornbread stuffing mix 1 can (8 oz) w hole kernel golden corn with sweet peppers, drained 2 pounds ground beef 1 can (1 1 V4 oz) condensed chili beef soup 2 slices (2 oz.) process cheese, cut in half diagonally •A cup tomatoes and green chilies Vt cup water In saucepan, cook o n io n w ith chili powder in butter until tender. Add Vi cup stuffing mix and corn. Finely crush remaining stuffing mix. M ix thoroughly beef, Vi cup soup, crushed stuffing mix and egg. One waxed paper, pat meat in to rectangle (1 2 x 9 ” ). Press corn mixture into meat to within l-inch o f edges. W ith aid o f waxed paper, roll meat tightly je lly -ro ll fashion, starting at long edge. Seal ends and seam; use waxed paper to transfer lo a f to shallow b aking dish (13x9x2” ). Place seam-side down. Bake at 35O’ F. for I hour or until done. Top with cheese slices. Bake 5 minutes more or until cheese melts. M eanw hile, in saucepan, combine remaining soup, tomatoes and green chilies and w ater. H e a t; stir occasionally. Serve with meat loaf. Makes 6 to 8 servings. Mexican cookery, a four- week evening class sponsored by Portland Com m unity College, will be o ffered at the O verlook House beginning Thursday, February 4. Course instructor is M aria Oros, who has demonstrated her recipes on several local television shows. Hours are from 6:30-8:30 p.m. each Thursday in February, and cost is $19.50.
