!4 cup White Hominy Quick Grits
1 tablespoon butter or margarine
56 teaspoon salt
One 16-oz. can sliced cling peaches
in heavy syrup
14 cup almond liqueur
3 envelopes unflavored gelatin
34 cup firmly packed brown sugar
4 egg yolks
4 egg whites
1 cup heavy cream, whipped
2 tablespoons toasted slivered
almonds

Drain peaches, reserving 56 cup
syrup, chop peaches. Combine re
served syrup and liqueur; soften gel
atin in syrup mixture. Remove grits
from heat; stir in peaches, softened
gelatin, and 56 cup brown sugar,
mixing well. Stir a small amount of
grits into egg yolks; stir egg yolks
into grits mixture. Pour mixture
into large bowl; chill about 1 hour
or until thickened.
Beat egg whites at medium speed
on electric mixer until foamy. Con
tinue beating at high speed,
gradually adding remaining 54 cup
