BARBECUE BAKE UP
GR O U N D BEEF BASE
1 lb. ground beef
Vi cup chopped onion
'A medium green pepper, cut
into thin strips
one 6-oz. can tom ato pasta
1 teaspoon salt
1 teaspoon chili powder
TA M A LE TOPPING:
2 cups of w ater
1 cup enriched corn meal
1 ta b le s p o o n

1 cup (4 oz.) shredded sharp
Cheddar cheese

For ground beef base, brown
meat, onion and green pepper in 10-
inch s k ille t; d rain. Add tom ato
paste, salt and c h ili powder; mix
well. Spoon mixture onto bottom o f
8-inch square baking dish.
For tamale topping, heat oven to
350 F. Combine water, corn meal,
butter and salt in 2 -q t. saucepan.
Bring to a boil, stirring constantly.
Reduce heat. Cook over medium
heat, stirring constantly, 4 to 5
minutes or until m ixture thickens.
Remove from heat; stir in '/j cup
cheese. Stir small amount o f corn
meal m ixture into egg; return to
corn meal mixture. Mix well; spread
evenly over ground beef base. Bake
about 20 minutes. Sprinkle with
remaining chesse; continue baking
about 5 minutes or u n til cheese is
melted. Makes 4 to 6 servings.
