August 1. 1974 Page 3 The outset of the canning season in Oregon has set off a flu rry of complaints from home canners that the lids they have purchased this season are not sealing properly. Dr. Jane W yatt, consumer officer for the Oregon De partment of Agriculture, said complaints too numerous to count have reached her office and those of home extension agents and newspaper edi tors and they all deal with canning ja r lids manufac lured by K e rr Glass Manu fa c tu rin g C o rp o ra tio n of Sand Springs, Oklahoma She said most of the women complaining are say ing that sometimes less than half the lids are sealing. Dr. W yatt contacted K err headquarters in Oklahoma and a spokesman there said there had been a slight change in the character of the lids, but that the com pany would stand behind tin- product if proper procedures are used. Dr. W ya tt said the spokesman, who did not wish to be identified, said the sealing material is harder than it has been, but that proper preparation of the caps should produce a good seal. K e rr recom m ends th a t home canners do not use the "open kettle" method com monly used in preparing jams and jellies, but that the traditional “ boiling water bath" and "pressure canner" methods, w ith proper hand ling, should produce satis factory results. Dr. W yatt said most of the complaints are coming from persons using one of the two approved methods. but K err insists a good seal w ill result if the job is done right. Dr. W yatt suggested a few simple steps to follow: do not use jars that are not manufactured specifically for home canning: make certain the jars are in good condition with smooth, unchipped tops; scald (do not boil) lids by pouring boiling water over them; let them stay in the water until ready to use; use screw bands that are clean and in good condtion. She said the seal can be checked in several ways. You can hear the lids plink as the jar is cooling and the lid snaps down. Tap the lid w ith a spoon when the ja r is cold. A clear. ringing sound means a seal. The lid also w ill be curved down if the ja r is sealed. I f there is no seal the co n te n ts may be re p ro cessed but, by no means according to Dr. W yatt, should the contents be stored in the ja r if there is a ques tion about the seal. An improper seal provides the o p p o rtu n ity fo r b a cte ria l growth which can cause food poisoning.
