The basic dough in sweet
yeast breads from every coun­
try is much the same. The
dilfesence ia in the shaping,
the spices and extra ingre­
dients Most traditional sweet
breads are rich in eggs. And
some of the breads, especially
those of
Hungarian
and
Bohemian origin, are made
with sour cream to make an
even richer dough.
The recipe for this t)ld
Country Coffee Koll was de­
veloped by the Test Kitchens
of Fleisrhm an n's
Yeast.
Extra rich with sour cream it
produces a flaky, very tender
coffeecake. This plus a tradi­
tional sweet pecan filling and
elegant appearance make it
excellent company fare.
The dough is prepared by
the conventional method —
that is the yeast is dissolved
in warm liquid before it's
added to the rest of the ingre­
dients.
After it's mixed the dough
is chilled two hours or up to
five days. This means you
ran start well ahead of your
meeting day. Then shape and
bake the coffee roll just
before guests arrive so you
can serve it fresh from the
oven.

1 cup dairy sour cream
2 tbsp. boiling water
2 packages Fleiach-
mann's Active
D ry Yeast

in undiaaolved active dry
yeast Let stand 3 minutes.
Stir u ntil yeast is com plete­
ly dissolved, set aside.
Place softened margarine,
1 cup flour, sugar, lemon
peel and salt in a large bow l.
Adil sour cream m ixture and
beat 1 m inute at low speed
o f electric m ixer, scraping
bowl occaaionally. Add egg
yolks and 1 /2 cup flou r,
beat at m edium speed 1
m inute, scraping bow l oc­
caaionally. Stir in enough
additional flou r to make a
soft dough. T urn out onto
lightly floured b o ard ; knead
8 to 10 minutes. (Dough
w ill not be sm ooth.) Divide
dough in half. Wrap in w a x ­
ed paper C hill at least 2
hours or up to ft days.
