Hence the extreme neces sity of clean, sanitary conditions sur rounding all the processes of butter-making. However, butyrin, the characteristic fat of butter, imparts to good butter a peculiar and desira ble flavor that cannot be lmltcted by any other substance. I sincerely hope that every teacher in Portland will insist that her pupils will be given nothing but pure, wholesome pasteurized milk.
