AIM OX tri? new vrKtiaoio imp wwn Are PlrtnK beans, at 25 cents a pound: sorrel, at 6 cnts a bunch; And morel mushrooms nt 25 cents a pound. Everyone knows now to use string beans, but some appear to be unfamiliar with norrel. This makes jrood cream oup, is nice in salad, and excellent when conked s a puroe, liko spinach espe cially when served with roast lamb or lamb cutlets. Morels have their devout ndmirera in spite of their somewhat un attractive honeycombed appearance. I know of on weil-meanitiff housekeeper who. unacquainted with this variety of mushroom, ftt rnly reproVcd a market man for exposing suh "worm-eaten thmits' for sale, and threatened to "re port" him. .Morels aro pood either stewed or saute, as well as being a use ful flavoring for patices. There fs a tradition that Nero's ami nlile mother, Ajjrtppina, used a dish of moreln as a vehicle for the poison which removed her husband. Oaudlus, and cleared the way to the throne for hr son: and that, thereafter, Nero, wilh his remarkable nense of humor, always re forred to this preparation as "the dish of the cods.' This name is still riven to morels by some epicures. Asparagus is very Rood this werk nnd ran pes in price from 10 to 20 cents a pound. I saw some very nice mustard preens, two bunches fr 5 cents as well as dandelion, cabbage, preens, spinach, chicory, watercress and bnissels sprouts. Head lettuce is getting cheaper and better In quality. Peas are 10 to 15 cents a pound. J lot house cucumbers cost IS to cents and tomatoes 20 cents a pound. ppcrs come 3 for 1T cents and, gg plant 35 cents a pound. Thers. are good black radishes, and crisp pink Oregon radishes. Celcriac, celery and cauliflower are still jrood. but artichokes are less inviting than they were. Nice-little- new potatoes come at 3 or 3 pounds for 25 cents. I like the very smallest on pa, 'Bngllsh. style" boiled with a eprlg of fresh mint and simply served with a dressing of good fresh butter. Strawberries are to be had at 25 and 50 cms a box. Rhubarb is cheaper than It was last week. The fruit market is not a particularly Interesting field just at present, but we know there are plenty of pood things coming. Frog-legs are in again at 35 cents a dozfn. Crawfish are also to be seen at to cents a dozen, ready cooked. Shad Is more plentiful this week, costing 10 to 15 cents a pound. Perch, at 10 cents a pound la also plentiful, and the larger ones, stuffed nnd master), nrp very acceptablA with a simple caper and chopped pickle sauce. There was good halibut at- 12 cents and salmon at IS and 30 cents. Flounder, sole, catfish, striped bass, mackerel, rpek cod and smelt complete the list, together with crabs, shrimps and clams. For poultry. th prices average as tol lows: Turkey, 3ft cents; hens, 30 cents: broilers. 60 to 76 cents each; ducks. 25 cents a pound: eese, 30 cents a pound, and squabs 75 cents a pair. One or two brands sold at 25 cents for 2 oimce bottle of Lemon aud 35 cents for.2 ounee bottle of Vanilla are moderately good. The extraordinary high quality of HISLOFS Lemon and Vanilla Extracts is not reached by any manufacturer in any part of these United States. .They cost no more than the moderately good.
