Barbecue has joined hot dogs
and pie as some of America’s
favorite foods. For 15 years
Adam’s Rib Smokehouse has been
serving the area’s best authentic
American BBQ. Their food is so
popular owners Mike Adams and
his wife Katrina opened a second
location near Keizer, just across
the Parkway, in 2016.
“We try not to regionalize
ourselves,” said Mike Adams.
Adam’s Rib Smokehouse serves
up a variety of styles including
pork ribs and hush puppies. “We
(also) do beef brisket and beef
ribs and we serve a traditional
Santa Maria-style beef tri-
tip and poquito beans.” The
meats are smoked daily using a
dry rub; they make all of their
signature side dishes, in house,
using locally-grown ingredients.
“We believe BBQ is about using
quality meats, real wood and rub
seasoning,” said Mike. “Low and

Since its humble beginnings
as a food concession trailer at the
Salem Saturday Market in 1998
Adam’s Rib Smokehouse has
opened two locations, and added
a catering and special events
departments. Their mission is
make every person who comes
through their doors to feel like
they are coming home for dinner.

State Street in downtown Salem.
The second location is located at
