Name of truck: That Guy’s Bistro
Location: General Duffy’s Waterhole, 404 SW Forest Ave.
Hours: 11:30 a.m. to 8 p.m. every day
Owner: Ben Miller
Opened: 2017
Type of food: American
About the cart: The cart serves sandwiches and American fair such
as their “diggity dog” beef frank, burgers and mac salad. The sandwiches
come in two options: open-face/flatbread style or with loaded fries. Ben
Miller opened his cart in the current location more than five years ago af-
ter catering events in the area. It took the Millers about six months to find
one of the last spots at General Duffy’s Waterhole and have since bought a
second truck, a beer cart and now run the food out of Duffy’s Annex.
“Every year they just keep growing and we’re growing with them,” said
Brennan Miller, Ben’s son. Their second truck is located at Van Henion
Brewing Company in Bend.
Your first order should be: Brennan Miller was split between the tri-tip
with marinated onions, mushrooms and red peppers and melted provo-
lone or the basil chicken “filly” with pistachio basil pesto and a balsamic
glaze drizzle.
Fun fact: Fans of That Guy’s Bistro might see recipes in stores soon.
They’re currently working on getting packaged meats and some of their
sauces, like their habanero or fry sauce, into local supermarkets.
“The fry sauce is liquid gold,” Brennan Miller said.
