Homemakers
BY ALDENE N. AHO,
County Home Demonstration
agent
HELLO THERE:
It was a pleasure to have Bur
ton Hutton state 4-H club agent,
in the county last week. In addi
tion to talking at the schools and
several club meetings, Mr. Hut
ton was speaker at Brookings Ro
tary’ club and at the Azalea Gar
den club. 1 accompanied Mr. Hut
ton to the Garden Club and it
was an afternoon I’ll not soon
forget.
His speech was fine, but the
highlight of the afternoon was
the skit, "Fun with Flowers,”
put on by the 12 Azalea 4-H
Flower Girls and their leader,
Mrs. Dorothy Lockland accom
panying them on the piano. You
w’oud have enjoyed seeing their
first birthday cake decorated
with candles and flowers, also the
“fresh" Easter bonnets with real
flowers, and the weddnig party.
But most of all, youwould’ve
enjoyed the real live Easter bun
ny named "Snow” sitting amid
flowers in a basket. Also the spe
cial guests "Onion” and "Petu
nia" who are twin kids, snowy
white and sporting fancy fresh
flower Easter bonnets. Yes, the
flower girls did themselves proud
f and I feel certain they gained
something from this activity’
which will make them better cit
izens. And helping our boys and
girls be better citizens is the goal
goal of all those w’ho work with
4-H clubs.
Many people often find that
soup or gravy turns sour rather
quickly in the refrigerator. If
soup is covered while still warm,
then placed in the refrigerator,
is is likely to turn sour sooner

<han if it is cooled before cov
ering and storing. The reason for
this is that moisture condenses
on the inside of the cover, drops
back into the soup, and then it
forms an excellent medium for
the growth of organisms that
cause the soup or gravy to spoil.
If you see condensation forming
on covers of other foods in the
refrigerator, it is advisable to
wipe the cover dry, then replace
them on the food.
To satisfy the preference of
those of you who prefer a gold-
•en-brown pie crust to a light
one try using skim milk in place
of water the next time you make
pie crust. The lactose, or milk
sugar, in the skim milk carmel-
izes to an enticing brown color
quicker than other types of
sugar.

Increased Educational Benefits
A 815 increase in state educa
tional benefits to Oregon world
war 2 veterans attending full-
time courses in college under
graduate study will go into effect
next Sept. 1, by virtue of an
amendment approved in the cur
rent state legislature and signed
by Governor McKay.
This announcement was made
in a meeting in Portland last
week of 14 state and independ
ent college officials w’ho gathered
to discuss methods o f placing
Oregon’s graduating veterans in
jobs. The conference was calk’d
by the Multnomah county veter
ans’ service committee.
W. F. Gaarenstroom, state di
rector of veterans’ affairs, ex
plained that the increase to 850
in monthly benefits should prove
helpful to college veterans whose
federal benefits are expiring. The
present 835 state aid will remain
in force for all but those taking
full-time undergraduate college
studies.
Veterans are urged not to wait
